Steps
Before you start
- Start at least 30 minutes ahead: the chicken marinates while the rice soaks, so do both at the same time.
- Use a heavy 5- to 6-quart (4.7-5.7 L) pot or Dutch oven with a tight-fitting lid; a thin pot scorches the rice on the bottom.
- Have everything sliced and measured before you start browning the onions, because the steps move quickly once the pot is hot.
- Do not lift the lid during the 15-minute simmer or the 10-minute rest; the steam is what cooks the rice.
Marinate the chicken
- In a large bowl, stir together the yogurt, garlic, ginger, garam masala, turmeric, chili powder, lemon juice and 1½ tsp marinade salt until smooth.
- Add the chicken pieces and turn until every piece is thickly coated.
- Leave on the counter while you prepare the rice (at least 30 minutes).

Ready when: Chicken is evenly coated in a thick, orange-gold paste with no dry spots.
Tip: Don't marinate longer than 2 hours at room temperature; refrigerate if you need more time and bring back to cool-room temperature before cooking.
Rinse and soak rice
- Put the basmati in a bowl, cover with cold water, swish gently with your fingers, and pour off the cloudy water.
- Repeat 4 to 5 times until the water is mostly clear.
- Cover with fresh cold water and soak for 30 minutes, then drain in a fine-mesh strainer for at least 5 minutes, shaking occasionally.

Ready when: Grains look opaque white and are slightly softer; the strainer water has stopped dripping.
Tip: Handle the soaked grains gently; they are fragile and break easily.
Steep the saffron
- Warm the milk until hot but not boiling.
- Add the crushed saffron, stir, and set aside to steep while you cook the onions.

Ready when: Milk turns deep golden-orange and smells floral.
Brown the onions
- Melt the ghee in the heavy pot over medium-high heat.
- Add the sliced onions and a pinch of salt from the rice measure.
- Cook, stirring every minute or so and lowering the heat to medium if they darken too fast, for 12 minutes.
- Use a slotted spoon to remove about one-third of the onions to a plate for garnish, leaving the ghee and the rest in the pot.

Ready when: Onions are deep golden brown with crisp edges and smell sweet, not bitter.
Tip: If any pieces turn dark brown or black, pick them out; they taste bitter in the finished rice.
Bloom spices, sear chicken
- Reduce heat to medium.
- Add the cinnamon, cardamom, cloves, bay leaves and cumin seeds to the onions and stir for 30 seconds until fragrant.
- Add the chicken with all of its marinade and the green chilies, if using.
- Cook, stirring often, for 8 minutes.

Ready when: Chicken is opaque on the outside and the yogurt has thickened into a clinging sauce with ghee separating at the edges.
Tip: The chicken will finish cooking with the rice, so don't worry about cooking it through now.
Add rice and water
- Scatter the drained rice evenly over the chicken without stirring it in.
- Sprinkle with the 1 tsp rice salt and half of the cilantro and mint.
- Pour the 2¼ cups (535 ml) water gently around the edge of the pot.
- Raise the heat to high and bring to a full boil, then give one gentle fold with a spoon to level the rice.

Ready when: Liquid is boiling vigorously and the rice is level and just covered, with the chicken mostly beneath.
Tip: Taste the liquid now; it should taste pleasantly salty, as the rice will absorb it. Add a pinch more salt if bland.
Cover and steam
- Drizzle the saffron milk in streaks over the surface.
- Lay a clean kitchen towel over the pot, press the lid on firmly, and fold the towel corners up over the lid.
- Reduce the heat to the lowest setting and cook undisturbed for 15 minutes.

Ready when: Steam escapes in thin wisps only; no bubbling sounds remain and the rice surface has small steam holes.
Tip: Keep towel ends away from the flame on a gas stove.
Rest off the heat
- Turn off the heat and move the pot to a cool burner.
- Leave it covered and untouched for 10 minutes so the rice firms up and moisture redistributes.

Ready when: Rice is tender, with separate grains and no wet puddles at the bottom.
Tip: Resist lifting the lid; escaping steam leaves the top layer of rice hard.
Check, fluff and serveOven 165°F / 75°C
- Remove the lid.
- Check a chicken piece with an instant-read thermometer; it should read at least 165°F (74°C).
- Use a fork to fluff the rice from the edges inward, lifting the chicken and spices through gently.
- Discard the bay leaves and cinnamon stick if you like.
- Top with the reserved fried onions and the remaining cilantro and mint.
- Serve hot.

Ready when: Chicken reads 165°F (74°C) or higher and is tender; rice grains are long, separate and fluffy.
Tip: Fluff with a fork, not a spoon, to avoid breaking the long grains.
Good to know
Tips
- Use aged basmati if you can; it cooks up longer, drier and more separate than new-crop or generic long-grain rice.
- Chicken thighs stay juicy through the long steam; breast meat dries out, so avoid substituting it unless you cut the cook time.
- If your lid is loose, the towel trick is essential. Otherwise add 2 tbsp more water, as steam will escape.
- Serve with cucumber raita and lemon wedges to balance the richness.
Make ahead
"Marinate the chicken up to 24 hours ahead in the refrigerator, covered. Slice the onions a day ahead and refrigerate. Rinse and soak the rice no more than 1 hour before cooking."
Storage & reheating
"Cool within 1 hour of cooking. Refrigerate in airtight containers up to 3 days. Freeze up to 2 months in portions. Do not leave at room temperature more than 2 hours. Reheat single portions with 1 to 2 tablespoons of water, covered, in the microwave for 2 to 3 minutes (stirring halfway) or in a covered skillet over low heat for 6 to 8 minutes until steaming hot throughout (165°F / 74°C). Thaw frozen portions overnight in the refrigerator first."
Substitutions
- ghee (or half butter, half neutral oil) → 2 tbsp unsalted butter plus 2 tbsp neutral oil. Gives a similar richness; the flavor is slightly less nutty.
- saffron threads → ¼ tsp ground turmeric in the milk. Gives color but not saffron's aroma; add an extra pinch of garam masala.
- Kashmiri chili powder (or ½ tsp cayenne) → ½ tsp cayenne plus 1 tsp sweet paprika. Matches Kashmiri chili's color with a bit more heat.
- plain whole-milk yogurt → Plain whole-milk Greek yogurt thinned with 2 tbsp water. Use the same weight; do not use nonfat yogurt, which can split.
