Charred Cabbage Slaw with Garlic and Chili Oil

A vibrant cooked cabbage slaw with deeply caramelized edges, finished with fragrant garlic-infused chili oil. The high-heat sear creates nutty, charred notes while maintaining a slight crunch, balanced by sharp vinegar and warm spice. A Mediterranean-inspired side dish that works equally well warm or at room temperature.

Steps

Before you start
  • Have all ingredients prepped and within arm's reach—the cooking happens fast
  • Slice the cabbage into thin, uniform pieces so it cooks evenly
  • Make sure your pan is large enough to hold the cabbage in a single layer at first
  1. Prep the cabbage

    • Remove and discard the outermost leaves of the cabbage.
    • Slice the cabbage in half lengthwise, then trim out the core.
    • Slice each half into thin, uniform 1/4-inch ribbons using a sharp knife or mandoline.
    • You should have about 12 cups of sliced cabbage.

Ready when: Cabbage is sliced uniformly into thin ribbons

Tip: Uniform slice thickness ensures even charring and cooking

  2. Heat the pan and sear cabbage

    • Place a large stainless steel or carbon steel skillet over high heat.
    • Let it get very hot for 1–2 minutes until a drop of water sizzles and evaporates immediately.
    • Add 1½ tbsp (22 ml) of the olive oil.
    • Working in two batches if needed, add the sliced cabbage, spreading it in a single layer.
    • Don't stir for the first 2–3 minutes; let it sit and char.
    + Show details

Ready when: Bottom layer of cabbage is deep golden brown with charred edges

Tip: Resist the urge to stir; a hot pan and brief contact create the best char

  3. Toss and continue cooking

    • Toss the cabbage using a wooden spoon or tongs.
    • Continue cooking over high heat for 2–3 minutes more, stirring occasionally, until most of the cabbage has picked up some browning and has softened slightly but still retains a little texture.

Ready when: Cabbage is wilted with charred pieces throughout and slightly tender but still has some crunch

Tip: Keep the heat high to develop flavor; lower heat will steam it instead of char it

  4. Make the garlic-chili oil

    • While the cabbage finishes cooking, warm the remaining 1½ tbsp (22 ml) olive oil in a small bowl.
    • Add the minced garlic and red pepper flakes.
    • Let this sit at room temperature; the residual heat will gently bloom the flavors.
    • After the cabbage is done cooking, pour this mixture over it.

Ready when: Garlic is fragrant and oil is warm to the touch

Tip: Blooming garlic and chili in warm oil releases their aromatics without burning them

  5. Finish and season

    • Remove the skillet from heat.
    • Pour the garlic-chili oil over the cabbage.
    • Add the red wine vinegar, sea salt, and freshly ground black pepper.
    • Toss everything together until well combined and evenly coated.
    • Taste and adjust seasoning if needed.

Ready when: All ingredients are evenly distributed and the slaw is glossy and aromatic

Tip: Season while warm so the flavors penetrate the cabbage fully

  6. Rest and serve

    • Let the slaw rest in the pan for 5 minutes before serving.
    • This allows the flavors to meld and the temperature to moderate slightly.
    • Serve warm or at room temperature as a side dish.

Ready when: Slaw has cooled slightly and aroma is fully developed

Tip: This slaw is delicious warm, room temperature, or even chilled the next day

Good to know

Tips
  • High heat is essential: it creates the char and nutty flavor that defines this dish. A medium pan will steam the cabbage instead of caramelizing it.
  • Don't wash the cabbage after slicing unless it's visibly dirty. A little moisture is fine, but excess water will reduce the char.
  • This slaw pairs beautifully with roasted fish, grilled lamb, or hearty grain bowls. It also works as a topping for tacos or grain platters.
  • For extra depth, add a pinch of smoked paprika or 1 tsp of fresh lemon zest just before serving.
Make ahead

Prepare the cabbage (slice it) up to 6 hours ahead and store covered in the fridge. Cook the slaw up to 2 hours before serving; it actually improves as it sits and the flavors continue to develop.

Storage & reheating

Room temperature: 2 hours maximum. Refrigerator: up to 4 days in an airtight container. Reheat gently in a skillet over medium heat for 2–3 minutes, or serve chilled as a salad.

Substitutions
  • red wine vinegar → balsamic vinegar or sherry vinegar. Use the same amount; balsamic will add deeper sweetness, sherry vinegar adds a rounder acidity
  • red pepper flakes → Aleppo pepper or crushed calabrian chili. Same amount; Aleppo pepper is milder and fruitier, calabrian adds more heat and smokiness
  • green cabbage, cored and thinly sliced → savoy cabbage or purple cabbage. Savoy will be slightly more tender; purple cabbage cooks slightly faster and adds color
  • extra-virgin olive oil → garlic-infused oil or chili oil (store-bought). If using pre-made chili oil, use 3 tbsp total and reduce the red pepper flakes to 1/4 tsp to avoid overseasoning
