Steps

Before you start
  • Preheat oven to 400°F (200°C) for roasting the cauliflower
  • Line a baking sheet with parchment paper or foil for the finished burgers
  • Drain and rinse the canned white beans thoroughly
  • Measure out all ingredients before you begin mixing
  1. Roast the cauliflowerOven 400°F / 205°C

    • Toss the cauliflower florets with 2 tablespoons olive oil, ½ teaspoon kosher salt, and ¼ teaspoon black pepper.
    • Spread in a single layer on a large baking sheet.
    • Roast at 400°F (200°C) for 25–30 minutes, stirring halfway through, until the florets are deeply browned and tender enough to break apart easily with your fingers.

Ready when: Florets are deeply browned and fork-tender

Tip: Don't crowd the pan; spread the cauliflower in a single layer so it browns rather than steams.

  2. Cool and pulse the cauliflower

    • Remove the cauliflower from the oven and let cool for 5 minutes.
    • Transfer to a food processor and pulse 8–10 times until the texture is coarse and chunky (like wet couscous), with some small pieces remaining.
    • Do not overprocess into a paste.
    + Show details

Ready when: Texture is coarse and crumbly with visible small pieces

Tip: Pulse in short bursts rather than one long blend; overprocessing makes the mixture dense and gluey.

  3. Mix the wet ingredients

    • In a small bowl, whisk together the egg, 2 tablespoons fresh lemon juice, minced garlic, 1 tablespoon Dijon mustard, ½ teaspoon dried oregano, and ½ teaspoon smoked paprika until well combined.
    + Show details

Ready when: Mixture is uniform and no visible egg white remains

  4. Combine all ingredients

    • In a large bowl, combine the pulsed cauliflower, drained white beans, ¾ cup panko, ½ cup grated Parmesan, and the wet ingredient mixture.
    • Stir with a spatula until just evenly combined, about 1 minute.
    • The mixture should hold together when squeezed but still be slightly crumbly.
    • Do not overmix.

Ready when: All ingredients are evenly distributed and mixture holds together lightly

Tip: Mix gently by hand or with a spatula; a fork or spoon can overwork the batter and make dense burgers.

  5. Shape the burgers

    • Divide the mixture into 4 equal portions.
    • Using your hands, gently shape each portion into a patty about ¾ inch thick and 3½ inches in diameter.
    • Place each patty on a parchment-lined baking sheet, spacing them 2 inches apart.
    • If the mixture seems too wet to hold together, refrigerate for 10 minutes before shaping.
    + Show details

Ready when: Patties hold their shape and are uniform in size

Tip: Wet your hands lightly with water between patties to prevent sticking; don't pack the mixture too hard or the burgers will be dense.

  6. Brush with oil and bakeOven 375°F / 190°C

    • Lightly brush the top of each patty with ¼ teaspoon olive oil (about 1 tablespoon total divided among 4 burgers).
    • Bake at 375°F (190°C) for 12–15 minutes until the tops are golden and the patties feel firm when pressed gently in the center.
    • The edges should look slightly crispy.

Ready when: Tops are golden brown and patties feel firm and hold their shape

Tip: Don't flip the burgers; baking only on one side keeps them moist inside while the bottom firms up against the pan.

  7. Rest and serve

    • Remove the baking sheet from the oven and let the burgers rest for 5 minutes on the pan.
    • This allows them to firm up further and makes them easier to transfer.
    • Serve on toasted buns with your choice of toppings such as lettuce, tomato, onion, pickles, and sauce.

Ready when: Burgers are cool enough to handle and hold together firmly

Tip: If a burger breaks apart when moving it, slide it onto the bun while it's still on the pan or let it rest a bit longer.

Tips
  • For extra flavor and texture, add ¼ cup finely chopped toasted walnuts or pine nuts to the mixture in Step 4. Reduce the panko to ½ cup if you add nuts.
  • If you prefer a crispier exterior, increase the oven temperature to 400°F (200°C) in Step 6 and bake for 10–12 minutes, watching carefully so the patties don't brown too quickly on the outside.
  • Cauliflower is watery; thorough roasting and a light hand with the egg ensure the burgers don't fall apart. If your mixture seems very wet, refrigerate it for 15 minutes before shaping.
  • These burgers are best served fresh and warm but can be refrigerated and reheated. For meal prep, shape and freeze raw patties, then bake from frozen when ready to eat.
Make ahead

Patties can be shaped and frozen for up to 3 months. Bake directly from the frozen state, adding 5–8 minutes to the baking time. You can also prepare through Step 4 and refrigerate the mixture, covered, for up to 24 hours before shaping and baking.

Storage & reheating

Store cooked burgers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a 350°F (175°C) oven for 10–12 minutes until warmed through, or microwave on 50% power for 1–2 minutes per burger. Do not reheat in the microwave at full power, as it can make them rubbery.

Substitutions
  • canned white beans (cannellini or great northern) → 1½ cans (15 oz each) chickpeas or 1 can (15 oz) white beans mixed with ½ can (7.5 oz) black beans. Chickpeas will add a slightly nuttier flavor; the mixture may be a touch denser. If using a bean blend, keep the total drained weight around 850 g.
  • panko breadcrumbs → ¾ cup old-fashioned oats, pulsed in a food processor until coarsely ground, or ¾ cup regular breadcrumbs. Oats will give a nuttier texture and keep burgers slightly softer; breadcrumbs will create a tighter crumb. Both work well.
  • grated Parmesan cheese → ½ cup finely grated pecorino Romano or ½ cup nutritional yeast for a vegan version. Pecorino is sharper and saltier, so reduce the salt in Step 1 by ¼ teaspoon if using it. Nutritional yeast adds a savory, cheesy note without dairy.
  • large egg → 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, rested 5 minutes) or 3 tablespoons aquafaba (liquid from canned chickpeas). Either option works for vegan burgers. Aquafaba may make them slightly more tender; flax eggs add a nutty flavor.
