Steps

Before you start
  • Preheat oven to 375°F (190°C).
  • Line a 12-cup muffin tin with paper liners or grease the cups lightly.
  • Drain the pineapple well; reserve 2 tablespoons of juice and discard the rest.
  • Have all ingredients at room temperature for even mixing.
  1. Mix wet ingredients

    • In a large mixing bowl, whisk together the oil, eggs, and sugar until combined and slightly thickened, about 1 minute.
    • Stir in the drained pineapple and reserved pineapple juice.

Ready when: mixture is well combined and has a uniform appearance

Tip: Don't overmix; you just need the ingredients incorporated.

  2. Combine dry ingredients

    • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until evenly distributed.

Ready when: dry mixture is uniform with no lumps of baking soda or baking powder

Tip: Whisk the dry ingredients separately to ensure the leavening agents distribute evenly and prevent dense spots in the muffins.

  3. Fold in carrots and dry mix

    • Add the shredded carrots to the wet ingredients and stir to combine.
    • Pour the dry ingredients over the wet ingredients and fold them together with a wooden spoon or rubber spatula until just combined.
    • Do not overmix; the batter should be slightly lumpy.
    • If using walnuts, fold them in gently at the end.

Ready when: no streaks of dry flour visible and carrots are evenly distributed

Tip: Overmixing develops gluten and makes the muffins tough. Mix just until the flour disappears.

  4. Fill muffin cups

    • Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
    • Use an ice cream scoop or spoon to ensure even distribution.
    • Wipe any batter from the rims.

Ready when: all cups are filled to about the same level

Tip: Filling the cups to two-thirds allows room for rise without spilling over the edges.

  5. Bake muffinsOven 375°F / 190°C

    • Place the muffin tin in a preheated 375°F (190°C) oven.
    • Bake for 20–22 minutes, until a wooden toothpick inserted into the center of a muffin comes out with just a few moist crumbs clinging to it.
    + Show details

Ready when: toothpick inserted into the center shows only moist crumbs, not wet batter; muffins are golden brown on top and spring back when lightly pressed

Tip: Check at 20 minutes to avoid overbaking. Overbaked muffins will be dry; slightly underbaked is better than overdone.

  6. Cool in pan

    • Remove the muffin tin from the oven and let the muffins cool in the pan for 10 minutes.
    • This allows them to set just enough to be handled without falling apart.
    + Show details

Ready when: muffins are cool enough to handle without burning your fingers but still warm

Tip: Don't turn them out immediately; they need just enough time to set slightly or they will crumble.

  7. Remove and serve

    • Turn the muffins out onto a wire rack and let them cool completely or serve warm.
    • They are best enjoyed warm or at room temperature.

Ready when: muffins are removed from the tin without breaking

Tip: If any stick, run a small knife around the edge of the cup to loosen them gently.

Good to know

Tips
  • For extra moist muffins, use pineapple juice instead of water in the batter (you already have it reserved).
  • Don't skip draining the pineapple well; excess juice will make the batter too wet and the muffins gummy.
  • Shred carrots just before mixing so they release moisture into the batter for better hydration.
  • These muffins are wonderful topped with a simple cream cheese glaze (4 oz softened cream cheese mixed with 1 cup powdered sugar and a splash of vanilla).
Make ahead

You can freeze the unbaked batter in muffin liners for up to 2 weeks. Bake directly from frozen, adding 2–3 minutes to the baking time and checking for doneness with a toothpick.

Storage & reheating

Room temperature: Store in an airtight container for up to 2 days. Refrigerator: Up to 4 days in an airtight container. Freezer: Up to 3 months in a freezer-safe bag or container. Reheat in a 325°F (160°C) oven for 8–10 minutes or microwave for 20–30 seconds per muffin.

Substitutions
  • neutral vegetable oil → melted coconut oil or melted unsalted butter. Use the same amount. Butter will add richness; coconut oil keeps them lighter.
  • walnuts, coarsely chopped → coarsely chopped pecans or unsweetened shredded coconut. Use the same amount for pecans; for coconut, reduce slightly to 2/3 cup since it absorbs moisture differently.
  • all-purpose flour → whole wheat flour. Use half whole wheat and half all-purpose to keep muffins tender; all whole wheat will make them dense.
  • canned crushed pineapple in juice → unsweetened applesauce or grated apple. Drain applesauce well or squeeze excess moisture from grated apple. The moisture content should be similar to drained pineapple.
