Steps
Before you start
- Use a very light roast, ground as fine as powder (Arabic coffee grind) or finer than espresso. Pre-ground Arabic coffee works well.
- Crush the cardamom just before brewing; the aroma fades quickly once the pods are opened.
- Warm a thermos or insulated flask with hot water if you plan to hold the coffee for serving.
- Never let the coffee boil hard; a rolling boil makes it bitter and muddy.
Crush the cardamom
- Place the 8 cardamom pods in a mortar and pound gently 3–4 times, just until the pods split and the seeds show.
- Keep the husks and seeds together.

Ready when: Pods are cracked open but not pulverized.
Tip: Over-grinding makes the coffee gritty and cloudy.
Heat the water
- Pour 2 cups (480 ml) cold water into a small saucepan or dallah.
- Heat over medium heat until it just reaches a full boil with large bubbles, about 4 minutes.

Ready when: Large bubbles break steadily across the surface.
Add the coffee
- Reduce the heat to low.
- Stir in 3 tablespoons (18 g) finely ground coffee and stir once or twice so no dry clumps float on top.

Ready when: Coffee is fully wetted and a light foam begins to form.
Tip: Stop stirring after this; further stirring clouds the coffee.
Simmer gently
- Let the coffee simmer on low for 8 minutes.
- If foam rises toward the rim, lift the pot off the heat for a few seconds until it settles, then return it.
- Keep it at a bare simmer with tiny bubbles at the edge.

Ready when: The coffee smells rich and roasted, and the foam has thickened into a light golden layer.
Tip: Never let it boil over; it turns bitter.
Add cardamom and saffron
- Add the crushed cardamom and crumbled saffron.
- Simmer on low for 2 more minutes.

Ready when: The coffee turns a golden amber and smells strongly of cardamom.
Tip: Adding spices late keeps their aroma bright.
Rest and settle
- Remove from the heat and let the pot stand, undisturbed, for 2 minutes so the grounds sink to the bottom.

Ready when: The surface is calm and grounds have sunk.
Pour and serve
- Pour slowly into a warmed thermos or directly into small cups, using a fine strainer if needed and leaving the last spoonful of sludge behind.
- Fill each cup only one-third full and serve right away.

Ready when: Coffee pours pale golden and clear.
Tip: Traditionally, small, frequent refills keep the coffee hot.
Good to know
Tips
- Serve with dates or a sweet such as halwa to balance the coffee's bitterness.
- Serve small portions and refill often so every cup is hot.
- Use cold fresh water to start; it extracts more flavor than warm tap water.
- For a stronger cup, add 1 more teaspoon of coffee rather than simmering longer.
Make ahead
Brew up to 2 hours ahead and keep hot in a preheated thermos; the flavor stays fresh and clear.
Storage & reheating
Room temperature: hold hot in a thermos up to 2 hours. Fridge: up to 2 days in a sealed jar; reheat gently over low heat without boiling. Freezer: not recommended, though it can be frozen as ice cubes for iced coffee up to 1 month.
Substitutions
- saffron threads → ¼ teaspoon ground cloves or a few drops of rose water. Gives a different but traditional aroma; add rose water after pouring.
- green cardamom pods → ¼ teaspoon freshly ground cardamom seeds. Add with the saffron; the flavor is slightly stronger and cloudier.
- light roast coffee → Pre-ground Arabic coffee (qahwa blend). Use the same amount; it is already roasted light and ground fine.
