Steps

Before you start
  • Bring butter to cool room temperature (about 65°F/18°C)—it should hold an indent when pressed but not be soft or greasy
  • Preheat oven to 325°F (163°C) at least 15 minutes ahead
  • Toast pistachios in a dry skillet over medium heat for 3–4 minutes, stirring often, until fragrant; cool before chopping
  1. Cream butter and sugar

    • In a mixing bowl, combine the cool room-temperature butter and powdered sugar.
    • Using an electric mixer on medium speed, beat for 2–3 minutes until the mixture is pale, fluffy, and increased in volume.
    • If mixing by hand, cream vigorously with a wooden spoon for 5–7 minutes.
    • The texture should resemble soft sand, not greasy butter.

Ready when: Pale, fluffy, and increased in volume

Tip: Do not overheat the butter or cream too long—you want a light, crumbly texture, not a smooth paste.

  2. Add salt and cardamom

    • Add the salt and ground cardamom to the butter mixture.
    • Stir or beat on low speed for 30 seconds until evenly distributed.
    • The dough should smell distinctly of cardamom.
    + Show details

Ready when: Cardamom evenly distributed and fragrant

Tip: Freshly ground cardamom seeds have much more flavor than pre-ground; crack the pods and grind the seeds yourself with a mortar and pestle if possible.

  3. Combine dry ingredients

    • In a separate small bowl, whisk together the flour and cornstarch.
    • The cornstarch ensures a tender, crumbly texture characteristic of true shortbread.
    + Show details

Ready when: Flour and cornstarch evenly mixed

  4. Mix in flour and pistachios

    • Add the flour mixture to the butter mixture and fold gently with a spatula or stir with a wooden spoon until just combined.
    • Do not overmix.
    • Add the chopped pistachios and fold until evenly distributed.
    • The dough will be crumbly and hold together only when pressed.
    + Show details

Ready when: Flour incorporated, no visible dry streaks, pistachios distributed

Tip: Overmixing develops gluten and makes the cookies tough; mix just until combined.

  5. Press into pan

    • Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
    • Transfer the crumbly dough to the pan and press firmly and evenly into a single layer using the bottom of a measuring cup or your fingers.
    • The layer should be about ¼ inch (6 mm) thick and level.
    • Prick the surface all over with a fork at roughly ½-inch (1 cm) intervals.
    + Show details

Ready when: Dough pressed evenly into pan, fork-pricked all over

Tip: Press firmly to compact the dough—looser dough will crumble too much when cut.

  6. Score and bakeOven 325°F / 165°C

    • Using a sharp knife, score the dough into 24 squares (a 6×4 grid) without cutting all the way through.
    • Transfer the pan to the preheated 325°F (163°C) oven and bake for 12–14 minutes until the edges are light golden and the surface looks set but still pale in the center.
    • The shortbread should not brown deeply.
    + Show details

Ready when: Light golden edges, pale set center, no browning

Tip: Low heat and pale baking preserves the delicate, buttery flavor and tender crumb. Watch carefully—even 2 minutes extra can make them hard.

  7. Cut and cool

    • Remove the pan from the oven and let cool for 2 minutes.
    • While still warm, use a sharp knife to cut along the scored lines, dividing the shortbread into 24 individual squares.
    • Leave the cookies in the pan to cool completely at room temperature, about 15–20 minutes.
    • They will firm up as they cool.
    + Show details

Ready when: Cookies fully firm and cool enough to handle

Tip: Cutting while warm prevents the baked dough from shattering; cutting too soon while very hot risks soft, unclean edges.

  8. Remove from pan

    • Lift the parchment paper out of the pan and place on a cooling rack or cutting board.
    • Carefully lift each cookie from the parchment, or break apart along the cut lines.
    • Store in an airtight container.

Ready when: All cookies removed and ready to store

Good to know

Tips
  • Freshly ground cardamom seed is essential for best flavor—crack the green pods and grind the seeds using a mortar and pestle or spice grinder just before baking.
  • Toast the pistachios yourself and chop them coarsely for the best flavor and texture; they should be visible in the finished cookies.
  • Do not overmix the dough once flour is added; overworking develops gluten and makes the shortbread tough instead of tender and crumbly.
  • Low, gentle heat (325°F / 163°C) is crucial; higher temperatures brown the shortbread too quickly and can create a hard, bitter texture.
Make ahead

Dough can be made up to 2 days ahead: prepare through step 4, cover the bowl, and refrigerate. Bring to room temperature before pressing into the pan and baking. Baked shortbread keeps for up to 1 week; you can also freeze the baked pan before cutting, then bake from frozen, adding 2–3 minutes to the baking time.

Storage & reheating

Store in an airtight container at room temperature for up to 7 days. The cookies stay crisp and maintain their flavor. Do not refrigerate or freeze after baking, as they may absorb moisture and lose crispness. Unbaked dough keeps in the refrigerator for up to 2 days or in the freezer for up to 3 months.

Substitutions
  • roasted, unsalted pistachios → almonds, coarsely chopped and toasted. Use the same weight. Almonds are slightly more neutral, allowing the cardamom to be the star.
  • green cardamom pods → ½ tsp ground cardamom (if using pre-ground). Pre-ground cardamom loses potency quickly; use it only if very fresh. Freshly ground seeds are strongly recommended.
  • powdered sugar → granulated sugar (same weight, 85 g or 0.67 cup). Granulated sugar creates a slightly coarser, grainier shortbread; powdered sugar yields a more delicate crumb.
  • cornstarch → potato starch or arrowroot starch (same weight). These starches create similar tenderness. Avoid using all flour, as it will make the cookies tougher.
