Cardamom Kulfi with Rose and Pistachio

A dense, creamy frozen dessert made by gently simmering evaporated and condensed milk with fresh-ground cardamom, then folding in whipped cream, rose water and pistachios. It has the rich, caramelized-milk flavor of traditional kulfi without hours of stirring.

Steps

Before you start
  • Plan ahead: the kulfi needs about 40 minutes to cool and at least 6 hours to freeze, so make it the day before serving.
  • Chill the heavy cream and the mixing bowl in the fridge so the cream whips quickly and holds peaks.
  • Clear a level spot in your freezer for the molds.
  • Rose water strength varies by brand. Start with 1 teaspoon and taste before adding more; too much tastes soapy.
  1. Grind spices, chop nuts

    • Split the cardamom pods, discard the husks and grind the seeds to a fine powder with a mortar and pestle or spice grinder.
    • Finely chop 40 g (⅓ cup) of the pistachios for the kulfi and roughly chop the remaining 15 g (2 tbsp) for garnish.
    • Put the cold heavy cream and a large mixing bowl in the fridge.

Ready when: Cardamom is a fine powder with no large husk pieces; pistachios are in small, even bits.

Tip: A pinch of the sugar-sweet condensed milk in the grinder helps if seeds keep jumping around; otherwise grind in short bursts.

  2. Make cornstarch slurry

    • In the saucepan, whisk the cornstarch into the cold whole milk until completely smooth with no lumps.
    • Add the evaporated milk, condensed milk, ground cardamom, saffron (if using) and salt, and whisk to combine.

Ready when: Mixture is uniformly pale cream with no visible cornstarch clumps.

Tip: Mix the cornstarch into cold milk before heating; it clumps if added to hot liquid.

  3. Simmer the milk base

    • Set the pan over medium-low heat and bring to a gentle simmer, whisking often and scraping the bottom and corners, about 5 minutes.
    • Keep at a bare simmer, stirring constantly, for 8 more minutes.
    + Show details

Ready when: The base is slightly thickened and coats the back of a spoon; a finger drawn across it leaves a clear line. It should be a light golden cream color.

Tip: Don't let it boil hard or walk away; condensed milk scorches quickly on the bottom.

  4. Cool the base

    • Remove from the heat and pour into a large bowl or shallow container to release heat faster.
    • Stir every 10 minutes and let cool to room temperature, about 40 minutes.
    • For faster cooling, set the bowl in an ice bath.

Ready when: The base feels neutral or cool when you touch the bottom of the bowl (under about 75°F / 24°C).

Tip: Press plastic wrap against the surface if you're not stirring, to prevent a skin.

  5. Flavor the base

    • Stir the rose water and the 40 g of chopped pistachios into the cooled base.
    • Taste: it should be fragrant with cardamom and only lightly floral.
    • Add up to ½ teaspoon more rose water if you like.
    + Show details

Ready when: Rose is a subtle background note, not perfume-like.

Tip: Freezing mutes flavor slightly, so season a touch more boldly than seems necessary, but add rose water in small amounts.

  6. Whip the cream

    • In the chilled bowl, whip the cold heavy cream with an electric mixer on medium-high speed for 2 to 3 minutes until it forms soft-to-medium peaks.
    + Show details

Ready when: When you lift the whisk, the peak holds its shape but the tip curls over slightly; it is not grainy or stiff.

Tip: Stop before stiff peaks; over-whipped cream turns buttery and makes the kulfi grainy.

  7. Fold together

    • Add about one-third of the whipped cream to the cooled base and stir gently to lighten it.
    • Scrape in the remaining cream and fold with a spatula, cutting down the middle and sweeping up the sides, until no white streaks remain.
    + Show details

Ready when: The mixture is smooth, fluffy and evenly colored, with pistachio flecks throughout.

Tip: Fold gently to keep the air in; stirring vigorously deflates the cream and makes the kulfi denser and icier.

  8. Fill the molds

    • Divide the mixture evenly among 8 molds (about ¾ cup / 180 ml each), leaving ½ inch (1 cm) of headspace for expansion.
    • Tap each mold on the counter to settle the mixture.
    • Cover with plastic wrap or foil.

Ready when: Molds are filled evenly, covered and ready for the freezer.

Tip: Standing the molds on a small tray makes them easy to move without spilling.

  9. Freeze until firm

    • Place the tray level in the freezer and freeze for at least 6 hours, or overnight, until completely solid.
    + Show details

Ready when: The center is firm when pressed with a finger and no liquid moves when you tilt a mold.

Tip: Keep the kulfi covered; uncovered it absorbs freezer odors.

  10. Unmold and serve

    • Dip each mold in warm water for 10 seconds, or hold it under warm running water, then run a thin knife around the edge and turn out onto a plate.
    • If using cups, serve in the cup.
    • Let sit at room temperature for 5 minutes to soften slightly, then top with the roughly chopped pistachios and rose petals, if using.

Ready when: The kulfi slides out cleanly and the surface looks glossy and slightly softened.

Tip: Don't leave molds in warm water longer than 10 to 15 seconds or the outside will melt.

Good to know

Tips
  • Stir constantly while simmering and scrape the corners of the pan; the sugars in condensed milk burn easily.
  • Make sure the base is fully cooled before folding in the cream, otherwise the cream melts and the kulfi will be dense and icy.
  • For a more traditional dense texture, freeze in small, narrow molds; the smaller the mold, the faster and smoother it freezes.
  • Toast the garnish pistachios in a dry pan for 2 minutes over medium heat for deeper flavor.
Make ahead

Make the kulfi up to 1 week ahead and keep it frozen in the covered molds. Garnish just before serving.

Storage & reheating

Freezer: keep covered in the molds for up to 1 week for best flavor, or up to 2 weeks. For longer storage, unmold and wrap each kulfi in plastic and put in an airtight container. Do not refreeze after thawing. Not suited to room temperature or fridge storage; serve straight from the freezer after 5 minutes of softening.

Substitutions
  • rose water → 1 tsp vanilla extract or ½ tsp kewra water. Vanilla gives a milder, more familiar flavor; kewra water is more floral and stronger, so use less.
  • unsalted shelled pistachios → blanched almonds, finely chopped. Slightly milder flavor and less color; use the same weight.
  • heavy cream → chilled full-fat coconut cream, whipped. Gives a subtle coconut flavor and a slightly softer set. Use 1½ cups (360 ml).
  • green cardamom pods → 1 tsp pre-ground cardamom. Convenient but less aromatic; freshly ground seeds taste noticeably better.
