Steps
Before you start
- Drain and rinse canned black beans thoroughly
- Measure all ingredients before you start blending
- Have lime juice ready—fresh-squeezed works best
Prepare the beans
- Place the 2 cans of black beans in a fine-mesh strainer and rinse thoroughly under cold running water for about 1 minute, stirring gently with your hand.
- This removes excess starch and sodium from the canning liquid.
- Let them drain completely—about 30 seconds.

Ready when: Beans are rinsed clean and no longer cloudy; water runs clear
Tip: Rinsing the beans is essential—it removes bitterness and prevents a gluey texture in the finished dip.
Add bases to food processor
- Transfer the drained beans to your food processor.
- Add the minced garlic, ground cumin, kosher salt, and a generous grind of black pepper.
- Add the jalapeño if using.
- Pulse 3 to 4 times to break down the beans slightly—they should be roughly broken up, not smooth.

Ready when: Beans are coarsely broken up with visible pieces, spices are evenly distributed
Tip: Pulse rather than blend to keep control over texture—you want beans that are partly broken, not a purée.
Blend in fresh ingredients and oil
- Add the roughly chopped cilantro, fresh lime juice (3 tablespoons), and extra-virgin olive oil (2 tablespoons) to the food processor.
- Pulse 4 to 5 more times until the cilantro is finely chopped and all ingredients are combined.
- The mixture should still be visibly chunky with flecks of cilantro and bean texture—not smooth.

Ready when: All ingredients are well combined with visible cilantro pieces and bean chunks throughout
Tip: Stop pulsing as soon as ingredients come together—over-blending breaks down the beans too much and makes the dip gluey and dense.
Taste and adjust seasoning
- Taste a small spoonful of the dip and assess the flavors.
- Add more salt if it tastes flat, more lime juice if you want extra brightness, or more cumin for earthier flavor.
- If the dip seems too thick, stir in 1 to 2 tablespoons of sour cream or Greek yogurt to loosen it slightly.
- Stir these additions in by hand with a spoon rather than pulsing again to maintain the chunky texture.

Ready when: Flavors are balanced to your taste and dip reaches desired consistency
Tip: Add sour cream gradually if using—start with 1 tablespoon, stir, and add more only if needed. You can always add more but cannot remove it.
Transfer to serving bowl
- Spoon the dip into a serving bowl.
- Drizzle the top with a light pour of extra-virgin olive oil (about ½ tablespoon) and sprinkle with a small handful of fresh cilantro leaves as garnish if desired.
- Serve immediately with tortilla chips, pita chips, vegetable sticks, or crackers.

Ready when: Dip is in serving bowl with garnish and ready to serve
Tip: If serving within 30 minutes, you can cover the bowl with plastic wrap. If refrigerating, cover and stir with a splash of fresh lime juice just before serving to keep the cilantro flavor bright.
Good to know
Tips
- Taste your cilantro first—some bunches are more peppery or bitter than others. Start with ¾ cup and add more to your preference.
- For a chunky dip, pulse only a few times. For smoother dip, blend longer—both are delicious, so choose based on your preference.
- Add a pinch of red pepper flakes or diced jalapeño if you like heat; start with ¼ teaspoon and add more to taste.
- This dip is even better the next day once flavors meld. Make it a few hours or a day ahead if possible.
Make ahead
Prepare the dip up to 1 day ahead; store in an airtight container in the refrigerator. Before serving, stir and adjust lime juice to brighten the flavor.
Storage & reheating
Room temperature (if serving within 30 minutes): covered. Refrigerator: up to 3 days in an airtight container. Freezer: not recommended—cilantro and lime juice lose vibrancy after thawing. To reheat if chilled: bring to room temperature or stir in a splash of lime juice to refresh.
Substitutions
- fresh cilantro leaves and tender stems, packed → fresh parsley or a mix of cilantro and mint. Use the same amount. Parsley will be less aromatic but still fresh; mint adds sweetness instead of cilantro's peppery note.
- fresh lime juice → fresh lemon juice. Use 2 to 3 tablespoons. Lemon is slightly less sharp and won't be quite as bright, but still adds needed acidity.
- sour cream or Greek yogurt → Mexican crema, whole milk, or avocado. Use 3 to 4 tablespoons crema or milk for the same effect; ¼ cup mashed avocado adds richness and complements black beans beautifully.
- ground cumin → chili powder or a pinch of smoked paprika. Use ½ teaspoon chili powder or paprika for warmer, slightly spicy flavor instead of cumin's earthy note.
