Beet and Goat Cheese Yogurt Parfait with Walnuts
A sophisticated savory yogurt parfait layering creamy goat cheese yogurt with roasted beets, toasted walnuts, and fresh dill. This bright, tangy dish works beautifully as a light lunch, brunch, or elegant starter. The earthy sweetness of beets contrasts perfectly with the tartness of yogurt and the richness of goat cheese.
Steps
Before you start
- Use room-temperature yogurt for the smoothest blending
- Toast the walnuts just before assembly so they stay crisp
- Have all components prepped and ready before building the parfaits
Toast the walnuts
- Heat a small dry skillet over medium heat.
- Add the chopped walnuts and toast, stirring frequently, for 3–4 minutes until fragrant and lightly golden.
- Watch carefully to prevent burning.
- Transfer to a plate and let cool slightly.

Ready when: Walnuts are fragrant and light golden brown
Tip: Toast right before assembly so walnuts stay crisp and don't soften from the yogurt
Make the goat cheese yogurt
- In a small bowl, combine the Greek yogurt, crumbled goat cheese, lemon juice, olive oil, and a pinch of sea salt and black pepper.
- Stir gently until the goat cheese is mostly blended into the yogurt but still has some visible creamy flecks.
- Taste and adjust seasoning as needed.

Tip: Don't overblend—leave some goat cheese flecks visible for texture and flavor
Build the parfaits
- Divide half of the goat cheese yogurt mixture between the two glasses, spooning it onto the bottom in an even layer (about ¼ cup / 60 ml per glass).
- Top each with half of the diced roasted beets, then add the remaining yogurt mixture on top.
- Finish with the remaining beets.

Tips
- For extra depth, dust the beet layer with a tiny pinch of ground cumin or smoked paprika before topping with yogurt
- If using raw beets, roast them first at 400°F (200°C) wrapped in foil for 45–60 minutes until fork-tender, then peel and cube
- To make this more substantial for lunch, add a small handful of crispy chickpeas or pumpkin seeds for extra protein and texture
- Serve cold or at room temperature depending on preference; both work beautifully
Make ahead
You can prepare the goat cheese yogurt mixture and toast the walnuts up to 4 hours ahead; cover the yogurt and store at room temperature, and keep walnuts in an airtight container. Assemble the parfaits no more than 30 minutes before serving to keep the walnuts and dill crisp.
Storage & reheating
This parfait is best eaten fresh. Leftovers (without walnuts and dill) can be covered and refrigerated for up to 1 day, but the texture will soften. Do not freeze.
Substitutions
- plain Greek yogurt (full-fat or 2%) → plain full-fat yogurt or Icelandic-style skyr. Use the same volume; the flavor and texture will be slightly thinner but equally delicious
- fresh goat cheese, crumbled → crumbled feta cheese or fresh ricotta. Feta will be saltier and more tangy; ricotta will be creamier and milder—adjust salt accordingly
- raw walnuts → toasted pecans, almonds, or pistachios. Each will bring different flavor and crunch; use the same weight and toast to preference
- fresh dill → fresh mint, parsley, or tarragon. Mint brings brightness, parsley adds freshness, tarragon adds a subtle anise note—use the same amount
