Baked Eggs with Salsa and Tortilla Chips
A vibrant, easy weekday breakfast or brunch dish where eggs bake nestled in a bed of salsa, tortilla chips, cheese, and caramelized onions. The chips soften slightly while the whites set and yolks stay runny, creating a perfect vehicle for scooping with crispy chips on the side.
Steps
Before you start
- Preheat the oven to 375°F (190°C)
- Use a shallow 9-inch (23 cm) baking dish or two individual ramekins
- Have all ingredients measured and ready before you begin
Caramelize the onions
- Heat olive oil in a 10-inch (25 cm) skillet over medium heat.
- Add the sliced onions and cook, stirring occasionally, for 8–10 minutes, until they are deep golden and beginning to soften and caramelize at the edges.
- Season lightly with salt and pepper.
- Transfer to a plate.

Ready when: Onions are golden brown and beginning to stick slightly to the pan
Tip: Keep the heat at medium so the onions caramelize rather than burn; stir every minute or two.
Build the base layer
- Spread half of the salsa (about 6 tablespoons / 90 ml) evenly across the bottom of your 9-inch (23 cm) baking dish or divide between two 8-oz (240 ml) ramekins.
- Scatter the lightly crushed tortilla chips over the salsa, then top with the caramelized onions in an even layer.

Tip: Don't crush the chips too fine; keep some texture so they stay crispy.
Add remaining salsa and cheese
- Dollop the remaining salsa (about 6 tablespoons / 90 ml) over the onion and chip layer, spreading it gently to create shallow wells.
- Sprinkle about 1/2 cup (55 g) of the shredded cheddar evenly over the salsa.

Tip: Leave some space in the center and around the edges for the eggs to nestle in.
Crack and nest the eggs
- Make four shallow indentations in the salsa mixture, spacing them evenly.
- Carefully crack each egg directly into a well, being careful not to break the yolks.
- Season the eggs lightly with salt and pepper, then scatter the remaining cheese (about 1/4 cup / 30 g) around the eggs.

Tip: Work gently when cracking eggs so the yolks stay intact and runny; the heat of the oven will set the whites while keeping yolks custard-like.
Bake until whites setOven 375°F / 190°C
- Place the baking dish on the center rack of a preheated 375°F (190°C) oven.
- Bake for 13–15 minutes, until the egg whites are mostly set but the yolks still jiggle slightly when you gently shake the dish.
- The cheese should be melted and beginning to brown at the edges.

Ready when: Egg whites are opaque and firm but yolks jiggle when shaken; cheese is melted and browned at edges
Tip: Start checking at 12 minutes; baking time varies with dish depth and oven. If you prefer fully cooked yolks, bake an additional 2–3 minutes.
Garnish and serve
- Remove from the oven and let rest for 1 minute.
- Top with fresh cilantro if desired, then serve immediately with lime wedges and additional tortilla chips on the side.
- Dollop with sour cream or crema if using.

Tips
- For a spicier dish, use hot salsa or add sliced jalapeños between the salsa and cheese layers.
- Make sure your salsa is not too watery, or the egg whites won't set evenly. If using very runny salsa, drain it slightly in a fine-mesh strainer for a minute or two.
- This dish works beautifully for a casual brunch for two or can be easily doubled in a larger baking dish for a crowd.
- Pair with fresh fruit, avocado toast, or a simple green salad for a balanced brunch plate.
Storage & reheating
Best served fresh from the oven. Leftover eggs (if any) can be refrigerated in an airtight container for up to 2 days and reheated gently in a 325°F (163°C) oven for 8–10 minutes until warmed through; the yolks will be more firm. Do not freeze.
Substitutions
- sharp cheddar cheese, shredded → Monterey Jack, Oaxaca, or Colby cheese. Use any mild melting cheese. Monterey Jack is milder; Oaxaca has a stringy melt; skip if avoiding dairy.
- fresh salsa (mild or medium) → Pico de gallo or fresh tomato sauce mixed with roasted poblano strips. Maintain about 1.5 cups (375 ml) total. Store-bought salsa roja or verde also works well.
- tortilla chips (unflavored) → Crushed blue or red tortilla chips, or crispy strips of fried tortillas. Chips add texture and absorb the salsa. Avoid heavily seasoned varieties so the salsa flavors shine.
- yellow onion, medium → Caramelized shallots or thinly sliced red onion (reduce caramelizing time to 5–6 minutes). Shallots are slightly sweeter; red onions stay crisper and add color.
