Bacon Cheddar Vegetable Rice
A savory, one-pot rice dish studded with crispy bacon, melted sharp cheddar cheese, and a colorful mix of vegetables. The bacon fat flavors the rice as it cooks, while the cheese creates a creamy richness without any cream. Ready in under 30 minutes and perfect as a side dish or light main course.
Steps
Before you start
- Measure out the rice and broth before you start cooking
- Have all vegetables chopped and ready so you can add them at the right time
- Shred the cheddar cheese fresh—pre-shredded has anti-caking agents that make it less creamy
Cook the bacon
- Place the chopped bacon in a large 12-inch skillet over medium heat.
- Cook, stirring occasionally, for 5–6 minutes until the bacon is golden and crispy.
- Use a slotted spoon to transfer the bacon to a paper-towel-lined plate, leaving about 2 tablespoons of bacon fat in the pan.

Ready when: bacon is golden brown and crispy
Tip: Don't drain all the fat—you need it to flavor the rice. If you cooked a lot of bacon and have more than 2 tablespoons of fat, pour off the excess.
Build the base
- Add the diced onion to the bacon fat in the skillet.
- Cook over medium heat, stirring frequently, for 3 minutes until the onion is softened and translucent.
- Add the minced garlic and cook for another 30 seconds, stirring constantly, until fragrant.

Ready when: onion is soft and light golden, garlic is fragrant
Tip: Keep the heat at medium so the garlic softens without browning or burning.
Toast the rice
- Add the uncooked rice to the pan and stir constantly for 1–2 minutes.
- The rice grains will become slightly opaque and smell toasty.
- This step infuses the rice with flavor and helps keep the grains separate as they cook.

Ready when: rice is translucent at the edges and smells toasty
Tip: Don't skip this step—toasting the rice gives the finished dish better texture and deeper flavor.
Add the broth
- Pour the room-temperature chicken broth into the skillet and stir well to break up any clumps of rice.
- The liquid should come up about ½ inch above the rice.
- Bring to a gentle boil over medium-high heat.

Ready when: broth reaches a rolling boil
Tip: Room-temperature broth helps the rice cook more evenly than cold broth straight from the fridge.
Simmer and add vegetables
- Once the broth is boiling, reduce the heat to medium-low and cover the skillet with a lid or aluminum foil.
- Simmer for 10 minutes without stirring.
- After 10 minutes, carefully lift the lid, scatter the frozen mixed vegetables over the rice, and sprinkle with salt and black pepper.
- Stir gently to distribute the vegetables, then cover again.

Ready when: rice has absorbed most of the broth and is beginning to soften
Tip: Don't stir during the first 10 minutes—this helps the rice cook evenly. Frozen vegetables release moisture as they thaw, so add them at this point rather than earlier.
Finish cooking
- Continue simmering, covered, for 5–6 minutes longer until all the liquid is absorbed and the rice is tender but still has a slight bite.
- If there's still liquid in the pan but the rice looks tender, uncover and cook for 1–2 more minutes.

Ready when: all liquid is absorbed, rice is tender, no visible broth in the pan
Tip: If your skillet has hot spots, you may see some liquid lingering on one side while the rice is done—that's fine. Just make sure the rice itself is tender, not hard or crunchy.
Melt in the cheese
- Remove the pan from heat.
- Scatter the shredded cheddar cheese over the hot rice and let it sit, covered, for 1 minute.
- Then stir gently with a wooden spoon until the cheese is melted and distributed throughout.

Ready when: cheese is fully melted and no visible shreds remain
Tip: Remove from heat before adding cheese so it melts smoothly without breaking or becoming grainy. Fresh-shredded cheese melts better than pre-shredded.
Finish and serve
- Fold the crispy bacon back into the rice.
- Taste and adjust seasoning with salt and black pepper as needed.
- Top with sliced scallions if using, and serve immediately.

Tip: Add scallions just before serving so they stay fresh and crisp. If made ahead, rewarm gently and add scallions after reheating.
Good to know
Tips
- Fresh-shredded cheddar melts much more smoothly than pre-shredded because it doesn't contain anti-caking agents. Shred it yourself right before cooking for the creamiest result.
- Toasting the rice before adding the broth is a classic technique that gives the rice a subtly nutty flavor and helps keep the grains separate and fluffy.
- This dish is forgiving with vegetable swaps—use whatever mixed vegetables you have on hand, whether frozen peas and carrots, corn and green beans, or a pre-made vegetable blend.
- For extra richness, stir in 2 tablespoons of sour cream or full-fat Greek yogurt along with the cheese (remove from heat first). This adds creaminess without heaviness.
Make ahead
You can cook this rice up to 2 days ahead. Store in an airtight container in the refrigerator. To reheat, place in a skillet over medium-low heat with a splash of broth or water, cover, and warm for 3–4 minutes until heated through. Add fresh scallions after reheating. Do not freeze, as the cheese texture will not hold well.
Storage & reheating
Room temperature: up to 2 hours in a covered pot. Refrigerator: up to 2 days in an airtight container. Freezer: not recommended due to cheese. Reheat in a skillet over medium-low heat with a splash of broth until warmed through, about 3–4 minutes.
Substitutions
- frozen mixed vegetables (carrots, peas, corn) → 2 cups fresh mixed vegetables (diced bell pepper, diced zucchini, fresh corn kernels, peas), added at step 5. Fresh vegetables add more texture. Add them at the same point as frozen vegetables, but they may cook slightly faster, so watch that the rice doesn't dry out.
- sharp cheddar cheese → 1 cup gruyère or smoked cheddar cheese. Gruyère adds earthiness; smoked cheddar deepens the bacon flavor. Both melt smoothly like sharp cheddar.
- bacon strips → 6 slices smoked sausage (chopped) or 4 tablespoons unsalted butter plus ¼ teaspoon smoked paprika. Sausage adds a different spice note. Butter with smoked paprika mimics bacon's flavor for a vegetarian version.
- chicken broth → 3 cups vegetable broth. Use vegetable broth for a vegetarian version if you omit the bacon or replace it with sausage or butter.
