Steps
Before you start
- Preheat your air fryer to 400°F (200°C) for 5 minutes
- Pat the fish fillets dry with paper towels—moisture prevents proper crisping
- Warm the tortillas gently (in a dry skillet or wrapped in foil) just before serving
Mix the spice blend
- In a small bowl, whisk together the cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper.
- Set aside.

Ready when: Spices are evenly combined with no clumps
Tip: Mixing the dry spices first ensures even distribution on the fish.
Make the lime crema
- In a small mixing bowl, combine the sour cream, mayonnaise, lime juice, minced garlic, and chopped cilantro.
- Stir until smooth.
- Taste and adjust lime juice or salt as desired.
- Cover and refrigerate until ready to serve.

Ready when: Mixture is creamy and fully blended
Tip: Make the crema ahead for deeper flavor—it can be made up to 2 hours ahead and refrigerated.
Prepare the cabbage slaw
- In a separate small bowl, toss the sliced cabbage, red onion, and cilantro with the lime juice and salt.
- Mix gently and set aside.
- The cabbage will soften slightly and the slaw will develop flavor while you cook the fish.

Ready when: Cabbage is tossed and evenly coated
Tip: Dress the slaw just before cooking the fish so it stays fresh and crisp.
Season and oil the fish
- Pat each fish fillet dry with paper towels.
- Place them on a plate and brush or rub both sides lightly with olive oil (about ¼ tsp per fillet).
- Sprinkle the spice blend evenly over both sides of each fillet, pressing gently so it adheres.
- Let sit for 1 minute while the air fryer finishes preheating.

Ready when: Fish is evenly coated with spices
Tip: Don't skip the paper towel step—dry fish crisps better and absorbs seasoning more effectively.
Air fry the fishOven 400°F / 205°C
- Arrange the seasoned fish fillets in a single layer in the air fryer basket, skin-side up if skin is present (or the thicker side up).
- Set the air fryer to 400°F (200°C) and cook for 10–12 minutes, depending on thickness.
- The fish should be opaque throughout and flake easily with a fork, and the exterior should be golden and slightly crispy.

Ready when: Fish is opaque, flakes easily, and the outside is golden; internal temperature reaches 145°F (63°C)
Tip: Don't overcrowd the basket; if your air fryer is small, cook the fish in two batches to ensure even crisping.
Warm the tortillasOven 300°F / 150°C
- While the fish finishes cooking, warm the corn tortillas in a large dry skillet over medium heat or wrap them in foil and warm in a 300°F (150°C) oven for 2 minutes.
- If using the skillet method, cook each tortilla for 15–20 seconds per side until warm and slightly flexible.
- Wrap the warm tortillas in a clean kitchen towel to keep them warm and pliable.

Tip: Warm tortillas are less likely to crack when you fill them.
Assemble the tacos
- Working quickly, place a warm tortilla on a plate.
- Add a small handful of cabbage slaw in the center, then top with one fish fillet.
- Drizzle generously with lime crema (about 2 tbsp per taco).

Tips
- For extra crunch, double-fry: after air frying, let the fish rest for 30 seconds, then return to the basket at 400°F (200°C) for another 1–2 minutes. This technique is optional but delivers a restaurant-quality crust.
- If your cabbage slaw becomes too wet, drain it gently before serving so it doesn't make the tortillas soggy.
- Make the lime crema and slaw during the air fryer preheat time to streamline your workflow and get tacos on the table in under 30 minutes.
- For a spicier kick, add ¼ tsp of cayenne pepper to the spice blend, or serve with hot sauce or jalapeños on the side.
Make ahead
The lime crema can be prepared up to 2 hours ahead and refrigerated. The cabbage slaw holds well for up to 1 hour. Fish is best fried fresh and served immediately.
Storage & reheating
Leftover lime crema keeps in the refrigerator for up to 3 days in a sealed container. Leftover cabbage slaw is best eaten the same day but can be stored in the fridge for up to 1 day. Do not store assembled tacos; if you have leftover cooked fish, store it in an airtight container in the refrigerator for up to 2 days and reheat gently in the air fryer at 325°F (160°C) for 3–4 minutes to recrisp. Store leftover tortillas in a sealed bag at room temperature for up to 3 days.
Substitutions
- white fish fillets (cod, halibut, or mahi-mahi) → shrimp (8 oz / 225 g large shrimp, peeled and deveined). Reduce air-fry time to 6–8 minutes; shrimp cook faster than fish. The seasoning and cooking method remain the same.
- sour cream → Greek yogurt. Use the same amount for a tangier, protein-rich crema with slightly less fat.
- corn tortillas (5-inch/13 cm) → flour tortillas (6-inch / 15 cm). Flour tortillas are larger and slightly more forgiving to handle, though the flavor will be less authentic.
- chili powder (not a spice blend) → cayenne pepper (start with ½ tsp and adjust to taste). Cayenne is hotter; use less if you prefer milder heat. Or blend chili powder with a pinch of cayenne for more kick.
