Steps

Before you start
  • Ensure your sourdough discard is at room temperature (not fresh from the fridge)
  • Pat corn kernels dry with a paper towel to prevent steaming and promote crispness
  • Bring air fryer to temperature before cooking for even browning
  1. Mix miso butter

    • In a small bowl, combine softened butter and white miso paste.
    • Stir vigorously with a spatula for 1–2 minutes until completely homogenized and no streaks remain.
    • The mixture should be smooth and pale beige.
    • Taste and adjust seasoning if desired.

Ready when: No streaks of white or dark miso visible; color is uniform

Tip: If the butter is too cold, it will be grainy and hard to mix. Room temperature is essential.

  2. Combine dough and toppings

    • Add the room-temperature sourdough discard to a bowl.
    • Fold in the miso butter until fully incorporated (the dough will be loose and batter-like).
    • Gently fold in the corn kernels, sea salt, and black pepper.
    • Do not overmix; the corn should be evenly distributed but not crushed.
    • Sprinkle sesame seeds on top if using.

Ready when: Corn kernels are evenly scattered throughout; miso butter is fully combined

Tip: Sourdough discard is wet—this is correct. You're making a thick batter, not a dough.

  3. Spread on parchmentOven 380°F / 195°C

    • Preheat air fryer to 380°F (193°C).
    • Cut parchment paper to fit the bottom of your air fryer basket.
    • Pour the corn-miso batter onto the parchment and spread it into an even ¼-inch (6 mm) layer using the back of a spatula.
    • Try to achieve uniform thickness so it bakes evenly.
    • The rectangle should roughly fit your basket, about 7 × 9 inches (18 × 23 cm).

Ready when: Batter is spread uniformly in a thin, even sheet

Tip: Thinner is crispier. If it's too thick, the center won't crisp up before the edges burn.

  4. Air-fry until edges brownOven 380°F / 195°C

    • Carefully transfer the parchment sheet (with batter) to the preheated air fryer basket.
    • Air-fry at 380°F (193°C) for 8–10 minutes.
    • Start checking at 8 minutes—the edges should be deep golden brown and the top should look set and slightly shiny.
    • The center may still feel a touch soft, but residual heat will crisp it further as it cools.
    + Show details

Ready when: Edges are deep golden brown, top is firm and glossy, and edges pull away slightly from parchment

Tip: If your air fryer runs hot, start checking at 7 minutes. Burnt edges = bitter taste, so watch carefully in the final 2 minutes.

  5. Cool and break into shards

    • Remove the parchment sheet from the air fryer and let the flatbread cool on the parchment for 5–10 minutes at room temperature.
    • As it cools, it will become increasingly crispy.
    • Once completely cooled, break or cut it into irregular shards roughly 2–3 inches (5–8 cm) wide.
    • Larger, uneven pieces have better texture than small crumbles.
    + Show details

Ready when: Flatbread is completely cold and snaps easily when bent; it should shatter, not bend

Tip: Breaking while still slightly warm will give cleaner shards. Once fully cooled, it becomes more brittle and may crumble.

Good to know

Tips
  • Sourdough discard should be unfed and active—fresh from a recent feeding—for the best rise and flavor. Refrigerated discard will be denser and less flavorful.
  • If your corn kernels are frozen, thaw and pat them very dry. Excess moisture will steam rather than crisp, making the flatbread chewy.
  • For extra umami depth, sprinkle a tiny pinch of nori (seaweed) powder or fish-free furikake seasoning on top before air-frying.
  • These shards are best eaten the day they're made, while they're still maximally crispy. After 24 hours, they'll soften slightly but remain pleasant; reheat briefly in the oven to restore crispness.
Make ahead

You can prepare the miso butter up to 3 days ahead and store it covered in the refrigerator. Bring to room temperature before mixing with the sourdough discard. The finished flatbread shards keep for up to 5 days in an airtight container at room temperature.

Storage & reheating

Room temperature (airtight container, up to 5 days): The shards will stay crispy if kept away from moisture. Do not refrigerate, as condensation will soften them. Freezer (freezer bag, up to 1 month): Thaw at room temperature in a closed container, or reheat shards in a 300°F (149°C) oven for 3–4 minutes to restore crispness.

Substitutions
  • white miso paste → red miso paste (or 2 tsp soy sauce + ½ tsp white miso). Red miso will add a deeper, slightly spicy flavor and a darker color. Reduce to 1 tbsp (18g) as it's more potent. Alternatively, mix soy sauce and a small amount of white miso for a lighter umami note.
  • fresh or frozen corn kernels → edamame, finely chopped mushrooms, or crispy bacon bits. Edamame adds protein and earthiness; mushrooms (sautéed and dried) deepen umami; bacon complements the miso beautifully. Use the same amount.
  • unsalted butter → neutral oil (grapeseed, vegetable, or light olive oil). Oil will make the flatbread slightly less rich but still crispy. Use the same amount (3 tbsp / 45 ml). The miso will blend more easily into oil.
  • fine sea salt → fleur de sel or Maldon sea salt. Use the same amount for finishing salt, or sprinkle a pinch of fleur de sel on the flatbread after air-frying for a briny, mineral finish.
