Air Fryer Sourdough Crispy Garlic Parmesan Breadsticks
Crispy, golden sourdough breadsticks kissed with garlic-infused butter and a generous coating of sharp Parmigiano-Reggiano. Air-fried to perfection in minutes, they're a showstopping appetizer or side that tastes indulgent but requires minimal effort. The exterior crisps beautifully while the inside stays tender and tangy from the sourdough.
Steps
Before you start
- Preheat air fryer to 375°F (190°C) for at least 3 minutes
- Have sourdough dough at room temperature—cold dough is hard to stretch
- Measure all seasonings and cheese into a small bowl before you start
- If using refrigerated dough, let it rest on the counter for 5–10 minutes to soften
Shape and rest dough
- On a lightly floured surface, gently stretch the sourdough dough into a rough rectangle about 10 inches × 8 inches (25 cm × 20 cm) and roughly 1/4 inch (0.6 cm) thick.
- Don't overwork it—sourdough is best when handled gently.
- If it resists and springs back, let it rest on the counter for 2–3 minutes, then stretch again.

Ready when: Dough is smooth and stretched to rectangle shape without tearing
Tip: If dough keeps springing back, it needs more rest. This means the gluten is still tight.
Cut into breadsticks
- Using a sharp knife, cut the rectangle lengthwise into 1/2-inch-wide (1.25 cm) strips.
- You should get 16–20 strips.
- Then cut each strip in half widthwise to create 32–40 individual breadsticks, each about 4–5 inches long (10–12 cm).
- Transfer to a clean plate and separate them so they don't stick.

Ready when: All breadsticks are evenly cut and separated on the plate
Tip: Use a bench scraper or dough knife to help separate strips and prevent sticking while cutting.
Infuse butter with garlic
- In a small saucepan over medium-low heat, melt the butter.
- Add the minced garlic and cook for 1–2 minutes, stirring constantly, until the garlic is fragrant and light golden but not brown.
- The butter should smell rich and aromatic.
- Remove from heat and let cool for 1 minute.

Ready when: Garlic is fragrant and light golden; butter is not brown or smoking
Tip: Watch carefully—burned garlic tastes bitter. You want fragrant and light golden, never brown.
Mix cheese and seasonings
- In a small bowl, combine the grated Parmigiano-Reggiano, Italian seasoning, red pepper flakes, and 1/4 teaspoon salt.
- Whisk or stir until evenly mixed with no lumps.
- Taste a tiny pinch and add another pinch of salt if desired.

Ready when: Mixture is uniform and evenly combined with no lumps
Tip: If your Parmigiano-Reggiano is very moist from fresh grating, spread it on a plate for 1 minute to air-dry slightly before mixing—this helps it coat better.
Coat breadsticks with garlic butter and cheese
- Working with 4–5 breadsticks at a time, brush each one generously on all sides with the garlic butter using a pastry brush or the back of a fork.
- Immediately roll or dip each buttered breadstick into the cheese-seasoning mixture, rotating to coat all sides.
- The cheese should adhere to the buttered surface.
- Place coated breadsticks on a clean plate, keeping them separated.

Ready when: Each breadstick is evenly coated with butter; cheese mixture adheres on all sides
Tip: Don't crowd breadsticks while coating—if they touch, the cheese won't stick evenly. Small batches work better.
Arrange in air fryer basket
- Lightly spray or brush the air fryer basket with a little neutral oil (avocado, vegetable, or cooking spray).
- Arrange the coated breadsticks in the preheated basket in a single layer, either standing upright or laying flat with at least 1/2 inch of space between each breadstick.
- They should not touch.
- If your air fryer is small, cook in two batches rather than overcrowding.

Ready when: Breadsticks are arranged with space between each one; none are touching
Tip: Standing them upright uses the basket space efficiently and crisps all sides evenly.
Air fry until crispy and goldenOven 375°F / 190°C
- Air fry at 375°F (190°C) for 12–14 minutes.
- At the 6-minute mark, shake the basket gently or flip the breadsticks to ensure even cooking on both sides.
- They're done when they're golden brown and crispy on the outside, and the cheese looks toasty and slightly caramelized at the edges.

Ready when: Breadsticks are deep golden brown on all sides; cheese is toasty and crisp when tapped with a fork
Tip: Air fryers vary in temperature. If breadsticks brown too fast, lower to 360°F; if not crisping by 12 minutes, raise to 385°F. Check at 10 minutes on your first batch.
Cool and finish
- Transfer the breadsticks to a paper towel–lined plate.
- While still hot, sprinkle with the fresh parsley (if using) and a little extra grated Parmigiano-Reggiano for garnish.
- Let them rest for 2–3 minutes—they'll continue to crisp as they cool.
- Serve warm.

Ready when: Breadsticks are crispy and have cooled enough to pick up without burning your fingers
Tip: If breadsticks soften after a while, re-crisp them in the air fryer at 350°F for 1–2 minutes. They'll be good as new.
Good to know
Tips
- Sourdough makes a real difference. Its tangy flavor pairs beautifully with garlic and Parmigiano-Reggiano. If you have sourdough discard or starter on hand, mix a few tablespoons into store-bought dough for extra tang.
- Oil your air fryer basket lightly. A quick spray of neutral oil prevents sticking and helps the bottoms crisp up evenly.
- Batch cooking is your friend. Overcrowding the basket results in soft, steamed breadsticks instead of crispy ones. Two batches is better than one cramped basket.
- Serve with warm marinara, garlic aioli, balsamic reduction, or hot honey for dipping. These breadsticks shine with a good dipping sauce.
Make ahead
You can coat the breadstick strips up to 4 hours ahead: arrange them on a plate, cover loosely with plastic wrap, and refrigerate. Air fry straight from the fridge, adding 1–2 minutes to the cooking time. You can also freeze coated breadsticks for up to 1 month in a freezer bag; air fry directly from frozen, adding 2–3 minutes to the time.
Storage & reheating
Room temperature: Keep in an airtight container for up to 2 days. They'll soften slightly; re-crisp in the air fryer at 350°F for 2–3 minutes. Freezer: Freeze cooled breadsticks in a single layer on a baking sheet, then transfer to a freezer bag for up to 1 month. Reheat in the air fryer at 350°F for 3–4 minutes from frozen. Do not refrigerate—breadsticks will go stale faster in the fridge.
Substitutions
- Sourdough dough → Store-bought pizza dough, naan, or thawed frozen bread dough. The flavor will be milder without sourdough's tang, but the technique and timing remain the same.
- Parmigiano-Reggiano cheese → Pecorino Romano or aged Asiago. Pecorino is sharper and saltier; Asiago is nuttier. Use the same amount.
- Red pepper flakes → Omit or reduce to 1/8 teaspoon for milder heat. The breadsticks will still be delicious with less or no spice.
- Garlic cloves → 1 teaspoon garlic powder. Stir garlic powder into the melted butter instead of cooking fresh garlic. Skip the saucepan step and mix directly into the cooled butter.
