Air Fryer Roasted Strawberry Rhubarb Salad with Honey Yogurt
Warm, caramelized strawberries and tart rhubarb roasted in an air fryer and served over creamy honey yogurt, with optional crunchy granola and fresh mint. This simple, elegant dessert showcases spring fruit with minimal hands-on work, relying on the air fryer's dry heat to gently caramelize the fruit while keeping it juicy and tender.

Steps
Before you start
- Preheat your air fryer to 375°F (190°C) before you begin—this is essential so the fruit starts roasting immediately and caramelizes evenly.
- Have all ingredients measured and ready so you can work efficiently during the short cooking time.
- Use Greek yogurt at room temperature by removing it from the refrigerator 30 minutes ahead, if possible.
Hull and halve strawberries
- Rinse 1 pound (450 g) fresh strawberries under cool water and pat dry.
- Using a strawberry huller or paring knife, remove the green hulls by cutting at an angle around the stem.
- Cut each strawberry in half lengthwise and place in a medium mixing bowl.

Ready when: Strawberries are hulled and halved with no green parts remaining
Cut rhubarb into pieces
- Rinse 8 ounces (225 g) fresh rhubarb under cool water.
- Using a chef's knife, trim off the leafy tops (which contain toxic oxalic acid) and any brown spots at the ends.
- Cut the stalks into ½-inch-thick pieces and add them to the bowl with strawberries.

Ready when: Rhubarb is trimmed and cut into uniform ½-inch pieces
Tip: Discard all leafy portions—only the stalks are safe to eat
Season the fruit
- Pour 2 tablespoons (30 g) honey over the strawberries and rhubarb in the bowl.
- Sprinkle 1 tablespoon (12 g) granulated sugar, ½ teaspoon (2.5 ml) vanilla extract, and ⅛ teaspoon (0.6 g) fine sea salt over the fruit.
- Using a rubber spatula, gently toss until all fruit is evenly coated with the honey-sugar mixture and no dry spots remain.

Ready when: All fruit is coated with honey and sugar mixture; mixture is evenly distributed
Tip: Toss gently to avoid bruising the delicate strawberry flesh
Arrange in air fryer basket
- Transfer the seasoned strawberries and rhubarb to a 6-quart air fryer basket, spreading them in a single even layer.
- Do not overcrowd—fruit should be no more than 2 layers deep, ideally in one layer.
- Even distribution allows every piece to caramelize and soften evenly.

Ready when: Fruit is spread in an even single or double layer with no clumping
Tip: If your air fryer is small or the fruit doesn't fit in one layer, work in two batches for even caramelization rather than piling fruit high
Roast fruit at 375°F (190°C)Oven 375°F / 190°C
- Set the air fryer to 375°F (190°C) and roast the fruit for 12 minutes.
- After 6 minutes, gently shake the basket to encourage even cooking and caramelization.
- The strawberries should be soft and yielding, the rhubarb tender and slightly breaking apart, with lightly caramelized golden edges visible on both fruits.

Ready when: Strawberries are soft with lightly caramelized golden-brown edges; rhubarb is tender and beginning to soften; juices are visible in the basket
Tip: If your air fryer runs hot, start checking at 10 minutes to prevent the fruit from becoming overly soft or losing its shape
Make the honey yogurt
- While the fruit roasts, place 1 cup (225 g) room-temperature plain Greek yogurt in a small bowl.
- Add 2 tablespoons (30 g) honey.
- If desired, add ½ teaspoon (2.5 ml) vanilla extract and the zest of ½ fresh lemon for brightness.
- Stir gently until the honey is fully incorporated and the mixture is smooth, creamy, and even in color.

Ready when: Honey is fully incorporated; yogurt is smooth, creamy, and consistent in color throughout
Tip: Use Greek yogurt at room temperature for the best flavor; cold yogurt straight from the refrigerator will taste thin and too tart
Cool the roasted fruit
- Remove the air fryer basket carefully (it will be very hot) and let the roasted fruit cool at room temperature for 2 to 3 minutes.
- This brief rest allows the intense heat to dissipate while the fruit remains warm, and it prevents the creamy yogurt from melting when the warm fruit is served on top.

Ready when: Fruit is no longer steaming and is warm to the touch but not hot
Assemble and serve
- Divide the honey yogurt evenly among 4 serving bowls, using about ¼ cup (56 g) per bowl.
- Top each bowl with an equal portion of the warm roasted strawberries and rhubarb, including any cooking juices from the air fryer basket.
- If desired, scatter 2 to 3 tablespoons (about 15 g) of granola, 1 to 2 tablespoons (about 8 g) of sliced almonds, and a few fresh mint leaves over the top of each bowl.
- Drizzle with additional honey if you prefer extra sweetness.

Ready when: Each bowl is assembled with warm fruit balanced on the yogurt base
Tip: Assemble the salads no more than 10 minutes before serving so the fruit stays warm and the yogurt remains thick and creamy
Good to know
Tips
- Don't overcrowd the air fryer basket. If your basket is small or you're doubling the recipe, roast the fruit in two batches to ensure it caramelizes evenly rather than steaming.
- Greek yogurt should be at room temperature for the best flavor and texture. Remove it from the refrigerator 30 minutes before serving if possible; cold yogurt will taste thin and excessively tart.
- Taste the roasted fruit before serving. If it's very tart (especially with a particularly sour rhubarb), you can drizzle an additional 1 to 2 tablespoons of honey over the assembled bowls.
- This salad works equally well as a light dessert after dinner or as a special breakfast or brunch dish. Serve warm for maximum contrast between the caramelized fruit and creamy yogurt.
Make ahead
The honey yogurt can be made up to 2 days in advance and stored, covered, in the refrigerator. The fruit is best roasted fresh for maximum warmth and texture contrast, but it can be roasted up to 4 hours ahead and served at room temperature (or briefly warmed in a microwave). Assemble the salads no more than 10 minutes before serving for the best experience.
Storage & reheating
Store roasted fruit in an airtight container in the refrigerator for up to 4 days. Honey yogurt keeps, covered, in the refrigerator for up to 5 days. Granola toppings are best served fresh; once added to the yogurt, they will soften within 30 minutes. To reheat roasted fruit, place it in a small oven-safe dish, cover with foil, and warm in a 300°F (150°C) oven for 5 to 8 minutes until heated through.
Substitutions
- fresh strawberries → 1 lb (450 g) fresh raspberries or blackberries. These berries will roast more quickly (8–10 minutes), so watch carefully to avoid over-softening. They are also more tart, so you may want to increase the honey to 3 tablespoons (45 g).
- fresh rhubarb stalks → 8 oz (225 g) diced firm apple or pear (such as Granny Smith or Bosc). These have similar textures to rhubarb when roasted and will roast evenly. Use tart varieties for the best flavor balance with the honey yogurt.
- plain Greek yogurt → 1 cup (225 g) sour cream. This will give a tangier, richer result. Reduce the honey to 1 tablespoon (15 g) since sour cream is less sweet and more tart than Greek yogurt.
- honey → pure maple syrup (2 tablespoons / 30 ml). Use the same amount for a different but complementary flavor. Maple syrup pairs beautifully with roasted fruit and adds an earthy note.
