Steps

Before you start
  • Buy skinless salmon fillet, or remove the skin yourself, so the cubes cook evenly.
  • Zest the lemon before you juice it. Zesting a squeezed lemon is much harder.
  • Do not marinate longer than 30 minutes. The lemon juice's acid turns the surface of the fish mushy and chalky if left too long.
  • Check your air fryer's capacity. A 5-6 quart basket cooks all the bites in one layer; a smaller one needs two batches.
  1. Cut the salmon

    • Run your fingers over the salmon fillet to check for pin bones and pull out any with tweezers.
    • Pat the fillet very dry with paper towels.
    • Cut it into 1-inch (2.5 cm) cubes, trying to keep them a uniform size so they cook at the same rate.

Ready when: Cubes are roughly equal in size and the surface feels dry, not slick.

Tip: Salmon is easier to cut cleanly if it's very cold; cut it straight from the fridge.

  2. Mix the marinade

    • In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, black pepper, garlic, kosher salt and honey (if using) for about 20 seconds.

Ready when: Marinade looks slightly cloudy and well blended, with specks of pepper and zest throughout.

  3. Coat and marinate

    • Add the salmon cubes to the bowl and fold gently with a rubber spatula until every piece is glossy and coated.
    • Cover and refrigerate for 15 minutes, no longer than 30.
    + Show details

Ready when: Salmon is evenly coated with no pooled marinade at the bottom of the bowl.

Tip: Stir gently. Rough handling breaks the cubes apart.

  4. Preheat the air fryerOven 400°F / 205°C

    • While the salmon marinates, preheat the air fryer to 400°F (200°C) for 3 minutes.
    • Lightly spray the basket with nonstick spray, or line it with a perforated parchment liner.

Ready when: Air fryer indicator shows it has reached 400°F (200°C).

Tip: A hot basket helps the salmon sear instead of stick.

  5. Arrange in basketOven 400°F / 205°C

    • Lift the salmon cubes out of the bowl with a fork, letting extra marinade drip off, and place them in the basket in a single layer with about ½ inch (1 cm) between pieces.
    • Discard the leftover marinade.
    • Cook in two batches if the basket is crowded.

Ready when: All cubes sit in one layer without touching.

Tip: Crowded pieces steam rather than brown. Never reuse marinade that touched raw fish.

  6. Air fry first sideOven 400°F / 205°C

    • Air fry at 400°F (200°C) for 4 minutes without opening the basket.

Ready when: Edges look opaque and the undersides are lightly golden.

  7. Shake and finish cookingOven 400°F / 205°C

    • Pull out the basket and gently shake it, or flip each bite with tongs.
    • Return it and air fry 2 to 4 minutes more, depending on your machine and cube size.
    + Show details

Ready when: Bites are lightly browned, opaque pink, and flake easily; the thickest piece reads 145°F (63°C) on an instant-read thermometer.

Tip: Start checking at 2 minutes. Salmon goes from juicy to dry quickly. For a softer center, remove at 130°F (54°C), but 145°F (63°C) is the USDA safe temperature.

  8. Rest and finish

    • Transfer the bites to a serving plate and let them rest for 2 minutes.
    • Sprinkle with chopped parsley (if using) and serve with lemon wedges for squeezing.

Ready when: Bites are steaming gently and glossy, not dry.

Tip: Squeeze fresh lemon over just before eating for the brightest flavor.

Good to know

Tips
  • Pat the salmon dry before marinating; surface moisture dilutes the marinade and prevents browning.
  • Keep the cubes the same size so they all finish together; trim any thin tail pieces and cook them separately for 1 to 2 minutes less.
  • Air fryers vary. The first time, check at 6 minutes total and note the time that works for your machine.
  • Use a thermometer rather than guesswork: salmon should read 145°F (63°C) in the thickest bite.
Make ahead

"Cut the salmon and make the marinade up to 4 hours ahead and keep them in separate covered containers in the fridge. Combine them only 15 minutes before cooking."

Storage & reheating

"Room temperature: no more than 2 hours. Refrigerator: cool completely, then store airtight up to 3 days. Freezer: not recommended for cooked bites since the texture turns dry. Reheat in the air fryer at 325°F (160°C) for 2 to 3 minutes, or enjoy cold on salads."

Substitutions
  • skinless salmon fillet → Arctic char, steelhead trout or skinless cod chunks. Cod is leaner and cooks about 1 minute faster; check at 5 minutes.
  • extra-virgin olive oil → Avocado oil. Neutral flavor and a higher smoke point; use the same amount.
  • honey → Maple syrup. Use 1 tsp (7 g); gives the same light caramelization.
  • fresh flat-leaf parsley → Fresh dill or chives. Dill especially pairs well with salmon.
