Steps

Before you start
  • Thaw frozen shelled fava beans if using frozen (or blanch fresh ones 2–3 minutes and shock in ice water). Make sure they're completely dry before air frying—pat with paper towels if needed.
  • Preheat your air fryer to 390°F (200°C) for about 3 minutes while you prepare the beans.
  • Have your lemon zested and juiced, and your herbs minced and ready to go.
  • Check that your air fryer basket is clean and dry.
  1. Prepare the garlic oil

    • In a small bowl, combine the minced garlic with the extra-virgin olive oil.
    • Let it sit while you prepare the beans—this allows the garlic flavor to gently infuse the oil without becoming bitter.
  2. Pat beans dry and season

    • Place the blanched or thawed fava beans in a medium bowl and pat them thoroughly with paper towels to remove excess moisture.
    • This step is crucial for crispiness in the air fryer.
    • Drizzle with the garlic oil, then toss gently to coat.
    • Sprinkle with dried oregano, sea salt, black pepper, and red pepper flakes (if using).
    • Toss once more until evenly coated.

Ready when: Beans are evenly coated with oil and seasonings

Tip: Don't skip drying the beans; moisture will steam them instead of crisping them.

  3. Air fry the beansOven 390°F / 200°C

    • Spread the seasoned fava beans in a single layer in the preheated air fryer basket at 390°F (200°C).
    • Work in batches if your basket is crowded; overcrowding will trap steam and prevent crisping.
    • Air fry for 14 minutes, shaking the basket or stirring the beans halfway through (at the 7-minute mark) to ensure even browning.

Ready when: Beans are deep golden brown and crispy on the outside, and fragrant

Tip: If your air fryer runs hot, check at 12 minutes; you want an even golden color, not charred spots.

  4. Finish with lemon and herbs

    • Transfer the hot, crispy beans to a serving bowl.
    • Immediately drizzle with the fresh lemon juice and scatter the finely chopped parsley and lemon zest over the top.
    • Toss gently to combine.
    • Taste and adjust seasoning with a pinch more salt or pepper if needed.

Ready when: Beans are glossy, aromatic, and evenly dressed with lemon and herbs

Tip: Add the lemon juice and herbs while the beans are still warm—the heat will brighten the flavors without making the parsley taste raw.

Tips
  • If using fresh fava beans in their pods, you'll need about 2½ lbs (1.1 kg) of pods to get 1 lb (450 g) of shelled beans. Shell them, then blanch in boiling salted water for 2–3 minutes until tender-crisp, shock in ice water, and pat dry before proceeding.
  • For an even more impressive presentation, transfer the finished beans to a small platter and drizzle with an extra ½ teaspoon of really good extra-virgin olive oil and a pinch of fleur de sel just before serving.
  • This recipe scales beautifully: double or triple it for a party. Just air fry in batches rather than crowding the basket, and toss the finished beans from all batches together in a large bowl before serving.
  • The beans are best served warm or at room temperature, within 30 minutes of air frying. If making ahead, store the cooked beans and fresh toppings separately, then combine just before serving.
Make ahead

Prepare the garlic oil up to 1 day ahead and store in the refrigerator. Bring to room temperature before using. You can blanch fresh fava beans up to 2 hours ahead and store them in the refrigerator, covered. Assemble and air fry just before serving for the best crispness and flavor.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F (175°C) for 3–4 minutes to restore some crispness, or eat chilled as a salad topping. Do not freeze; the texture will suffer.

Substitutions
  • fresh flat-leaf parsley → fresh mint or dill. Both pair beautifully with lemon and fava beans. Use the same amount. Mint adds a cool, fresh note; dill brings a delicate, slightly anise-like flavor.
  • dried oregano → 1 teaspoon fresh oregano, finely chopped, or ½ teaspoon dried thyme or marjoram. Mediterranean herbs all work well. Fresh oregano is more delicate; reduce to ½ teaspoon if using fresh. Thyme adds earthiness.
  • extra-virgin olive oil → avocado oil or light olive oil. If you want a milder flavor or don't have extra-virgin on hand, these work fine. The result will be less fruity and herbaceous.
  • lemon → lime zest and lime juice. Lime creates a slightly sharper, more tropical flavor. Use the same quantities for a different take on this Mediterranean dish.
