Air Fryer Crispy Tofu with Miso Caramel Sauce
Silky-crisp tofu cubes from the air fryer, tossed with a glossy miso caramel sauce that balances sweet, salty, and umami. The sauce clings perfectly to the tofu and works as a pasta topping, rice bowl base, or standalone dish. Ready in under 30 minutes.

Steps
Before you start
- Press the tofu block for at least 30 minutes (or overnight) to remove excess water—this is crucial for crispiness
- Preheat the air fryer to 380°F (193°C) for 3 minutes
- Have all sauce ingredients measured and ready; the sauce comes together quickly
Coat tofu cubes
- Pat the pressed tofu cubes dry with paper towels.
- In a bowl, toss the tofu with cornstarch and salt until evenly coated.
- This light coating promotes crispiness without adding bulk.

Ready when: All tofu pieces lightly dusted with cornstarch
Tip: Don't skip the pressing step—wet tofu will steam instead of crisp in the air fryer
Air fry tofuOven 380°F / 195°C
- Spread the tofu in a single layer in the air fryer basket (or on the rack if your air fryer has one).
- Air fry at 380°F (193°C) for 14–16 minutes, shaking the basket halfway through at the 8-minute mark.
- The tofu is done when all sides are golden brown and crispy.

Ready when: Golden brown on all sides, edges slightly darkened
Tip: Shake the basket at the halfway point to ensure even browning; overcrowding prevents crisping
Make miso caramel sauce
- While the tofu cooks, combine white miso, brown sugar, mirin, minced garlic, sesame oil, rice vinegar, and water in a medium saucepan.
- Whisk to combine, breaking up any lumps in the miso.

Ready when: Miso fully incorporated, sauce is smooth and uniform
Tip: Whisk the miso thoroughly to ensure no lumps remain, or it will be grainy in the final sauce
Simmer sauce
- Place the saucepan over medium heat and bring the sauce to a gentle simmer, stirring occasionally.
- Once it reaches a simmer, reduce heat to medium-low and simmer for 4–5 minutes, stirring every minute or so.
- The sauce will thicken slightly and deepen in color to a rich caramel tone.

Ready when: Sauce is glossy, coats a spoon lightly, and smells rich and caramelized
Tip: Don't let it boil hard or the sugar may crystallize; a gentle simmer ensures a silky texture
Combine tofu and sauce
- Remove the tofu from the air fryer and transfer to a serving bowl or plate.
- Pour the warm miso caramel sauce over the crispy tofu cubes and toss gently to coat.
- The warmth of the sauce and tofu will help it cling evenly.

Ready when: All tofu pieces are coated with glossy sauce
Tip: Toss gently to preserve the crispy exterior; vigorous tossing can break the cubes
Garnish and serve
- Top with sliced scallions and sesame seeds if desired.
- Serve warm over rice, noodles, or greens, or on its own as a quick protein.

Tip: Add garnishes just before serving so they stay fresh and don't wilt from residual heat
Good to know
Tips
- Press your tofu thoroughly—this is the single biggest factor in achieving crispiness. Even 30 minutes makes a huge difference; overnight pressing is ideal if time allows
- The cornstarch coating should be light and even. Too much will make the tofu gummy; too little and it won't crisp. A light dusting is all you need
- Don't skip the miso-breaking step in the sauce. Lumpy miso paste will ruin the silky texture. A good whisk or even a fork works if you have patience
- Serve the tofu warm for maximum crispiness and sauce adhesion. If it cools, the sauce will set and the texture becomes sticky rather than glossy
Make ahead
Sauce can be made up to 2 days ahead and refrigerated in an airtight container. Tofu must be pressed ahead (30 minutes to overnight) for best results. Reheat sauce gently over low heat or in the microwave before serving.
Storage & reheating
Refrigerate leftover tofu and sauce separately in airtight containers for up to 3 days. Reheat tofu briefly in a 350°F (175°C) air fryer (3–5 minutes) to recrisp it; avoid the microwave as it will soften the exterior. Reheat sauce gently on the stovetop over low heat or in short bursts in the microwave. Sauce can be frozen for up to 2 months; tofu is best consumed fresh but can be frozen and reheated (texture will be softer).
Substitutions
- white miso paste → red miso paste. Use the same amount. Red miso is earthier and more funky; the sauce will be darker and slightly more robust
- mirin (or honey) → honey or agave syrup. Use the same amount. Honey adds floral sweetness; agave is more neutral. The sauce will be thinner if using agave
- toasted sesame oil → neutral oil (vegetable or canola) + 1 tsp sesame seeds stirred in. Loses some aromatic depth but remains functional. Toast the seeds briefly to maximize flavor
- extra-firm tofu → extra-firm tofu or pressed tempeh. Tempeh is nuttier and naturally crispier; reduce air fry time to 12 minutes and watch closely
