Steps

Before you start
  • Use cooked quinoa that is completely cool and fairly dry. Warm or wet quinoa turns the coating gummy. Cook about ⅓ cup (65 g) dry quinoa ahead and refrigerate it for at least 30 minutes if needed.
  • These bites cook in 2 batches in a 5–6 quart (4.7–5.7 L) air fryer basket. Don't crowd the basket, or the coating steams instead of crisping.
  • Cut the florets to a uniform size, about 1½ inches (4 cm), so they cook at the same rate.
  • Have a clean plate or tray ready for the breaded florets, and keep one hand for wet ingredients and one for dry to avoid clumpy fingers.
  1. Cut the cauliflower

    • Remove the leaves and trim the core from the cauliflower.
    • Cut the head into florets about 1½ inches (4 cm) wide, halving any large ones so they're all similar in size.
    • Rinse, then pat completely dry with a clean towel.
    • Set aside in a large bowl.

Ready when: Florets are uniform in size and no longer feel damp to the touch.

Tip: Wet florets make the coating slide off, so dry them thoroughly.

  2. Season the flour

    • In the first shallow bowl, whisk together the flour, ¼ tsp of the salt, and the black pepper until evenly combined.

Ready when: No streaks of pepper remain in the flour.

  3. Make the egg wash

    • In the second shallow bowl, beat the eggs with the water until the whites and yolks are fully blended and no stringy bits remain.

Ready when: The mixture is a uniform pale yellow and pours smoothly.

  4. Mix the crust

    • In the third shallow bowl, combine the cooled quinoa, panko, smoked paprika, garlic powder, onion powder, and the remaining ½ tsp salt.
    • Toss with a fork, breaking up any quinoa clumps, until evenly mixed.

Ready when: The mixture looks loose and evenly speckled with spices, with no wet clumps.

Tip: If the quinoa feels damp, spread it on a plate for 10 minutes to air-dry before mixing.

  5. Bread the florets

    • Working with a few florets at a time, roll each one in the flour and shake off the excess.
    • Dip it in the egg wash and let the extra drip off for a second.
    • Then press it firmly into the quinoa-panko mixture, spooning crumbs over the top and sides so they stick.
    • Place the breaded florets on a baking sheet in a single layer.
    • Repeat with all of the florets.

Ready when: Each floret is fully covered in a thick, even layer of crumbs with no bare spots.

Tip: Keep one hand for dry (flour and crumbs) and the other for wet (egg) to avoid heavy clumps on your fingers.

  6. Preheat the air fryerOven 400°F / 205°C

    • Set the air fryer to 400°F (200°C) and preheat for 3 minutes.
    • Lightly spray the basket with cooking spray.

Ready when: The display shows the preheat is complete.

  7. Air fry first batchOven 400°F / 205°C

    • Arrange about half of the bites (roughly 18) in the basket in a single layer with a little space between them.
    • Spray the tops lightly with cooking spray (about 5 sprays).
    • Air fry at 400°F (200°C) for 14–16 minutes, shaking the basket gently and re-spraying any pale spots at the 8-minute mark.

Ready when: The crust is deep golden brown and crisp, and a knife slides easily into the thickest floret (internal temperature at least 165°F / 74°C).

Tip: Don't skip the spray. The dry crumbs need a little oil to brown instead of staying pale.

  8. Air fry second batchOven 400°F / 205°C

    • Transfer the first batch to a large heatproof mixing bowl.
    • Spray the basket again and cook the remaining bites the same way: 400°F (200°C) for 14–16 minutes, shaking and re-spraying at the 8-minute mark.

Ready when: The bites are deep golden brown and crisp, with a tender center when pierced.

Tip: Cooking in two batches gives much crunchier results than one crowded basket.

  9. Toss in buffalo sauce

    • While the second batch cooks, stir together the buffalo sauce and melted butter in a small bowl.
    • When all of the bites are cooked, put them in the large bowl and drizzle with the sauce.
    • Toss gently with tongs for about 15 seconds, just until lightly glazed.

Ready when: Bites are evenly coated in a glossy orange-red glaze, with the crust still crisp.

Tip: Toss right before serving. Sauce softens the crust the longer it sits.

  10. Garnish and serve

    • Pile the bites on a platter, scatter with sliced scallions if using, and serve immediately with ranch or blue cheese dressing for dipping.

Ready when: Served hot while the crust is crunchy.

Tip: For a milder version, use half buffalo sauce and half sweet chili sauce.

Tips
  • Squeeze out excess moisture: if your cooked quinoa seems wet, spread it on a plate for 10 minutes before mixing the crust.
  • Press the crumbs on firmly with your palm. A tight coating is the difference between crunchy bites and a bare floret.
  • Air fryers vary. Check at 12 minutes the first time and adjust the final minutes to your machine's hot spots.
  • For extra crunch, return the sauced bites to the air fryer at 400°F (200°C) for 1–2 minutes before serving.
Make ahead

Cook the quinoa up to 3 days ahead and refrigerate. The florets can be breaded up to 2 hours ahead and refrigerated in a single layer on a baking sheet, uncovered. Make the buffalo sauce mixture ahead, but toss the bites only right before serving.

Storage & reheating

Room temperature: up to 2 hours. Fridge: store unsauced bites in an airtight container up to 3 days; sauced bites up to 2 days (they soften). Freezer: freeze fully cooked, unsauced bites on a tray, then bag, for up to 2 months. Reheat in the air fryer at 375°F (190°C) for 5–7 minutes (8–10 minutes from frozen) until hot and crisp, then toss with fresh sauce.

Substitutions
  • large eggs → ½ cup (120 ml) unsweetened plant milk whisked with 1 tbsp cornstarch and 1 tbsp Dijon mustard. Makes the bites vegan; the coating will be slightly less thick but still crisp. Use vegan butter in the sauce too.
  • all-purpose flour → gluten-free all-purpose flour or cornstarch. Also use gluten-free panko, and check that the buffalo sauce is gluten-free.
  • panko breadcrumbs → crushed cornflakes or gluten-free breadcrumbs. Crush to coarse crumbs about the size of panko for the same crunch.
  • buffalo hot sauce → barbecue sauce or sweet chili sauce. Use the same amount and skip the butter if the sauce is already thick.
