Steps
Before you start
- Have all ingredients measured and ready before starting
- Preheat your air fryer to 375°F (190°C) for 3 minutes
- Pat canned beans dry with paper towels to remove excess liquid
Prepare the bean base
- Add drained and rinsed white beans, minced black garlic, 3 tablespoons (45 ml) olive oil, lemon juice, garlic powder, salt, and black pepper to a food processor.
- Pulse until mostly smooth but still slightly chunky—you want some texture, not a completely uniform purée.
- If the mixture seems too thick, add the 3 tablespoons (45 ml) water 1 tablespoon (15 ml) at a time until it reaches a thick, spreadable consistency, similar to hummus.
- Taste and adjust seasoning with more salt or lemon juice as needed.

Ready when: Bean mixture is smooth with small pieces of bean visible and spreads easily with a spoon
Tip: Don't over-process—lumpy texture adds body and prevents a dense, gluey dip
Transfer to air fryer dish
- Spoon the bean mixture into a small oven-safe baking dish or ramekin (6–8 inches / 15–20 cm) that fits in your air fryer basket.
- Spread it in an even layer and smooth the top with the back of a spoon.
- Set aside while you prepare the topping.

Ready when: Dip is evenly spread and compact
Tip: Choose a shallow dish so the topping will get crispy; deep dishes result in soft, steamed breadcrumbs
Make the crispy topping
- In a small bowl, combine panko breadcrumbs, minced fresh garlic, fresh thyme leaves, red pepper flakes (if using), and 2 tablespoons (30 ml) olive oil.
- Toss until the breadcrumbs are evenly coated with oil—they should look slightly darker and feel moist.
- Season lightly with a pinch of salt.

Ready when: All breadcrumbs are moistened with oil and evenly distributed
Tip: Coating breadcrumbs thoroughly with oil ensures even, golden crisping in the air fryer
Top and air fryOven 375°F / 190°C
- Sprinkle the breadcrumb mixture evenly over the bean dip, covering it loosely—don't pack it down.
- Place the dish in the preheated air fryer at 375°F (190°C) and cook for 8–10 minutes.
- Check at 7 minutes; the topping should be golden brown and crispy, and the dip underneath should be warm and starting to show small bubbles at the edges.

Ready when: Breadcrumb topping is golden brown and crispy; dip is warm with small bubbles visible at the edges
Tip: Air fryer baskets vary—if your topping isn't browning by 8 minutes, increase the temperature to 400°F (205°C) for the last 2 minutes, watching carefully to avoid burning
Cool slightly and serve
- Remove the dip from the air fryer (the dish will be hot) and let it rest for 1–2 minutes so the topping stays crispy and the dip firms up just slightly.
- Drizzle with a small amount of additional olive oil if desired, and serve warm with crackers, vegetable sticks, pita chips, or toasted bread.

Tips
- Black garlic cloves are fermented whole garlic and have a sweet, tangy, umami-rich flavor very different from fresh or roasted garlic. They're available at specialty grocers, online, or some Asian markets. If you can't find them, don't skip this step—they're central to the dip's flavor profile, but the substitution note above offers an alternative.
- Air fryer baskets vary in size and heat distribution. If your dip is browning unevenly, shake the basket gently or rotate the baking dish halfway through cooking (around the 5-minute mark) if your air fryer is large enough to do so safely.
- For a crowd, double the dip base recipe and prepare it in two batches, or use a slightly larger shallow dish (8×6 inches / 20×15 cm) and add 2–3 minutes to the cooking time. Monitor the topping closely to ensure even browning.
Make ahead
The bean dip base (without topping) can be made up to 2 days ahead and refrigerated in an airtight container. When ready to serve, transfer to the baking dish, add the fresh breadcrumb topping, and air fry as directed. Add 1–2 minutes to the cooking time if the base is cold from the refrigerator.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. The topping will soften over time. To reheat, transfer the dip to a small oven-safe dish, cover with foil, and warm in a 350°F (175°C) air fryer for 4–5 minutes, or in a conventional oven for 8–10 minutes. Add a fresh breadcrumb topping before serving for best results.
Substitutions
- black garlic cloves → 6 roasted garlic cloves (from 1 small bulb) plus ½ teaspoon soy sauce to mimic umami depth. Black garlic's sweet, fermented depth is hard to replicate, but roasted garlic with soy adds richness. The dip will be lighter in flavor but still delicious.
- panko breadcrumbs → ½ cup (50 g) crushed almonds or walnuts mixed with 1 tablespoon (15 ml) melted butter and a pinch of salt. Creates a nuttier, gluten-free topping with similar crispness. Toast the nut mixture at 375°F (190°C) for 6–7 minutes if using raw nuts.
- canned cannellini beans (or great northern beans) → 1½ cups (250 g) cooked dried cannellini beans or 1 can (15 oz / 425 g) great northern beans, drained and rinsed. Cannellini and great northern beans have similar mild flavor and creamy texture. Adjust water as needed for desired consistency.
- fresh thyme leaves → 1 teaspoon dried thyme or ½ teaspoon fresh rosemary, finely chopped. Dried herbs are more concentrated; use half the amount. Rosemary adds a piney, aromatic note instead of thyme's herbaceous quality.
