Air Fryer Couscous Arancini
Toasted pearl couscous is simmered in broth, bound with Parmesan and egg, wrapped around a cube of mozzarella, then coated in panko and air fried until shatteringly crisp outside and molten inside. Served with warm marinara, it's a lighter, faster take on risotto arancini that needs no deep frying.

Steps
Before you start
- Use pearl (Israeli) couscous, the large round pearls about the size of peppercorns. Fine Moroccan couscous will not hold a ball shape.
- Cut the mozzarella into 16 cubes first and keep them in the fridge. Use low-moisture block mozzarella, not fresh mozzarella in water, which makes the balls soggy and leaky.
- Clear freezer space for a small tray or plate. The shaped balls firm up there for 15 minutes before coating.
- Air fryer sizes vary. This recipe is written for a 5–6 quart (4.7–5.7 L) basket and cooks 8 arancini per batch with space between them.
Toast the couscous
- Set a 3-quart (2.8 L) saucepan over medium heat and add 1 tablespoon olive oil.
- When it shimmers, add the minced garlic and stir for 30 seconds.
- Add the dry pearl couscous and stir constantly for 2 minutes.

Ready when: Garlic smells fragrant but is not browned, and the pearls are pale gold with a nutty smell.
Tip: Don't let the garlic brown. Burnt garlic turns bitter in the final balls.
Simmer in broth
- Pour in the broth and add the salt.
- Bring to a boil over high heat, then reduce to low, cover tightly, and simmer for 9–10 minutes without lifting the lid.

Ready when: Nearly all the liquid is absorbed and the pearls are tender but still slightly chewy.
Tip: If the pearls are still firm and the pan is dry, add 2 tablespoons water, cover, and cook 2 more minutes.
Rest and fluff
- Remove the pan from the heat, keep it covered, and let it steam for 5 minutes.
- Uncover and fluff gently with a fork.

Ready when: Pearls are plump, glossy, and slightly sticky, with no pooled liquid.
Cool the couscous
- Spread the couscous in an even layer on a rimmed baking sheet.
- Let it cool for about 20 minutes, stirring once or twice, until just warm to the touch.

Ready when: Warm, not hot, when you press the back of your hand to the pearls.
Tip: Mixing in the egg while the couscous is hot will partly cook it and make the mixture crumbly.
Mix the binder
- Scrape the couscous into a large bowl.
- Add the Parmesan, beaten egg, parsley, and black pepper.
- Stir firmly with a spatula for about 1 minute, pressing against the side of the bowl, until the mixture clumps together.

Ready when: A small handful squeezed in your fist holds its shape without falling apart.
Tip: If it feels too dry to hold, stir in 1 tablespoon of marinara or water.
Shape and stuff
- Divide the mixture into 16 portions of about 3 heaped tablespoons (50 g) each.
- Flatten one portion in your palm, press a mozzarella cube into the center, and cup your hand to enclose the cheese.
- Roll into a smooth ball about 2 inches (5 cm) wide, pressing firmly.
- Place on a parchment-lined tray.

Ready when: Each ball is smooth and compact, and no cheese is visible.
Tip: Wet your hands lightly with water if the mixture sticks to them. Seal any cracks, because the cheese will leak through them.
Freeze to firm
- Put the tray of balls in the freezer for 15 minutes.
- Meanwhile, set up the coating station: flour in one shallow bowl, beaten eggs in a second, and panko mixed with the Italian seasoning in a third.

Ready when: Balls feel firm and cold on the outside but are not frozen solid.
Coat the aranciniOven 380°F / 195°C
- Roll each ball in flour and shake off the excess, dip in beaten egg and let the excess drip off, then roll in the panko mixture, pressing so it sticks all over.
- Return to the tray.
- Preheat the air fryer to 380°F (195°C) for 3 minutes.

Ready when: Each ball is evenly covered with no bare patches.
Tip: Use one hand for the dry coatings and the other for the egg to avoid clumpy fingers.
Air fry first batchOven 380°F / 195°C
- Mist or brush the basket lightly with olive oil.
- Place 8 arancini in a single layer with space between them, and mist the tops generously with olive oil.
- Air fry at 380°F (195°C) for 10–12 minutes, flipping gently with tongs at the 6-minute mark and misting any pale spots.

Ready when: Deep golden brown and crisp all over, with a center reading 165°F (74°C) on an instant-read thermometer.
Tip: Don't crowd the basket. Touching balls steam instead of crisping and can stick together.
Warm the marinara
- While the first batch rests on a plate, pour the marinara into a small saucepan and warm over medium-low heat for 4–5 minutes, stirring occasionally, until steaming and gently bubbling at the edges.

Ready when: Sauce is steaming hot with small bubbles at the edges.
Air fry second batchOven 380°F / 195°C
- Fry the remaining 8 arancini the same way: mist the basket and tops, then air fry at 380°F (195°C) for 10–12 minutes, flipping at 6 minutes.
- Let the cooked arancini rest 3 minutes before serving so the cheese can set slightly.

Ready when: Deep golden brown and crisp, with a center reading 165°F (74°C).
Tip: Fresh from the fryer the cheese is extremely hot. Rest 3 minutes before biting.
Serve
- Pile the arancini on a platter, scatter with torn basil, and serve right away with the warm marinara for dipping.

Tip: Break one open to see the melted mozzarella center and a stretchy cheese pull.
Good to know
Tips
- Pressing the couscous mixture firmly when shaping is what keeps the balls from splitting in the hot air stream.
- The 15-minute freeze matters: cold, firm balls coat cleanly and the cheese melts more slowly, so it stays inside.
- Mist the panko generously with olive oil. Dry crumbs stay pale and can blow around in the air fryer.
- If a ball does leak cheese in the basket, it's still delicious. Use a spatula to lift it off before the cheese sticks to the basket.
Make ahead
"Shape and coat the arancini up to 24 hours ahead. Arrange on a parchment-lined tray, cover loosely, and refrigerate, then air fry as directed, adding 1–2 minutes if very cold. For longer storage, freeze the coated, uncooked balls on a tray until solid, bag them, and air fry from frozen at 360°F (180°C) for 14–16 minutes, flipping halfway."
Storage & reheating
Room temperature: up to 2 hours after cooking. Fridge: store cooked arancini in an airtight container for up to 3 days. Freezer: freeze cooked arancini for up to 2 months. Reheat in the air fryer at 350°F (175°C) for 5–6 minutes from the fridge or 8–10 minutes from frozen, until hot through and crisp. Store marinara separately and reheat on the stove.
Substitutions
- dry pearl (Israeli) couscous → cooked arborio rice (about 3 cups / 500 g cooled cooked risotto). This gives traditional arancini. Skip steps 1–3 and mix in the cooled risotto with the other binder ingredients.
- low-moisture mozzarella block → provolone, fontina, or smoked scamorza. Use the same weight in cubes. Smoked cheese adds a deeper flavor.
- panko breadcrumbs → gluten-free panko or finely crushed cornflakes. Use the same volume. Also swap the pearl couscous for gluten-free pearl pasta or cooked rice and use gluten-free flour to make the whole dish gluten-free.
- marinara sauce → basil pesto thinned with a little olive oil, or arrabbiata sauce. Arrabbiata adds heat. Serve pesto at room temperature.
