About Bell Peppers
Bell peppers come in red, yellow, orange and green. They are crunchy raw and soft and sweet when cooked. They can be stuffed and baked, sliced into stir-fries, or roasted until the skins blister.
Red, yellow and orange peppers are sweeter, while green ones are a bit grassier. Unlike spicy peppers, bell peppers have no heat. Compared with tomatoes, they are firmer and less juicy. Onions, rice, meat and cheese all go well with them.
Questions folks ask
What is the difference between green and red bell peppers?
Green peppers are picked earlier and taste more grassy. Red ones ripen longer and taste sweeter.
Can I freeze bell peppers?
Yes. Slice them and freeze flat. They are best in cooked dishes after thawing.
How long do stuffed peppers bake?
Usually 30 to 45 minutes in a hot oven, until the peppers are tender and the filling is hot.
Kitchen tips
- Cut off the top and scoop out seeds and white ribs before stuffing.
- Roast whole peppers, then steam them in a covered bowl so the skin slips off.
- Slice peppers evenly so they cook at the same pace.
- Choose firm peppers with smooth, shiny skin.
- Pre-cook the filling for stuffed peppers if it includes raw meat or rice.
